Love bun! She didn't mention it when she talked about adding crispy fried shallots etc, but this dish also often has crushed toasted peanuts on top, which is delicious if you can eat them.

I will have to try lemongrass tofu when I get out of hospital. Being in hospital in Germany is interesting as they have a vegan menu however they have put a non-vegan item or two on the tray every meal so far until this evening (2.5 days) mostly the dessert and afternoon snack. This could be good for making as a meal. Today we had butter beans in fennel and tomato sauce with wholemeal bread and tomorrow we have a lentil stew.
