2:59 That vegetable broth does look STUNNING, nothing better than a great vegetable broth, IMO!!! When I have space for it, I put all my carrot peels, onion peels, bits and pieces left over from prepping food in a big plastic bag in my freezer. Then when it’s full, I make my vegetable broth!!! It is so satisfying to make something delicious out of something we’ve been used to just throwing away!!! Free food!!! 👏👍❤❤❤🤗

For the meatballs don’t drain the chickpeas and leave out the egg (juice is aquafaba and is the egg substitute). Now you have a good vegan meatball. 👍

I had been watching lots of Indian videos here on KZbin where they made dal (lentil) recipes. Then someone asked about which country made the most lentils in this world. I always thought it was India, but I had been wrong all this time. Actually India can’t make enough. They are the biggest importer and consumer of lentils though. The largest lentil farming and exporting country though is CANADA!!! I had NOOOOO idea!!! How’s that for a cool «fun fact»? 🤗♥️❤️♥️❤️♥️

7:29 OMG, what a beautiful bowl of vegetarian goodness - such soul food!!! These I have to enjoy!!! If I should change it up a bit, I would make vegetarian meatballs like I usually make with a vegan mince meat I love instead. Depends on if I’m in the mood for chickpeas or not. But chickpeas are both very delicious and sooooo good for us, so these balls are great! I bet they could be great to adapt a little to make matzah balls too, for those who makes Matzah ball soup (I never tried it, but plan to, as it looks soooo good!!!). I would also use vegan eggs instead of the actual eggs, as I don’t use eggs. In this I would use a flaxseed «egg» and add a little vegan cooking egg as well (I love Orgran’s, I use it for fried rice and other things!). Would both bind wonderfully and make it taste real yummy!!! Oh well, sorry for going off on top of that proverbial soap box, I guess I got a bit carried away… 🤗♥️❤️♥️❤️♥️

That looks delicious. For Christmas dinner, I made your chickpea balls in paprika sauce. I did cheat and use a food processor. When my sourdough bread gets stale, I turn them into bread crumbs, which is what I used in the balls. It was the hit of the dinner. Considering I made rib roast and garden fresh eggplant parmigiano. That is saying something. Thanks again for that video.

I think the egg is mainly used as a binder for the “meatball” recipe. I plan to use “Plants from Eggs” from Just Egg instead to make it vegan. You could also likely use some ground flax seed in water in place of the egg. A 1/4 cup of aquafaba might also work but I haven’t tried that substitution myself.
