I'll show you the best way to eat daikon in winter.
Ingredients (1-2 servings)
400g daikon radish
20g fish cake
20g spring onion
Half a naruto
7 spices
3 cups soup stock (1 and 1/3 teaspoons Japanese soup stock)
3 tbsp soy sauce
3 tbsp mirin (sweet cooking rice wine)
1 teaspoon sugar
You can substitute men-tsuyu for the broth.
Recipe
1. Peel the daikon thickly and cut it into 2cm thick pieces. Cut it into half moons.
Place the daikon in a heatproof container, cover with plastic wrap, and microwave for 6-7 minutes at 600W.
Cut the naruto into 7~8mm pieces. Cut the green onions into small pieces as you like.
Put 3 cups of soup stock, soy sauce, mirin, sugar, and daikon in a pot and bring to a boil. Bring to a boil, then reduce heat to low and simmer uncovered for 20 minutes.
Add half of the tenkasu (fish cake) and naruto (sweet potato) and simmer for another 5 minutes.
Serve in a bowl and sprinkle with green onions and shichimi togarashi.
