An immersion blender can be a life saver in such situations when you don't want to transfer the soup into a jug blender and then transfer it back into the pot. They are very easy and quick to clean too. I think you can get a pretty good deal these days and purchase one. It helps a lot if you make soups regularly.

Love the advice that just because you wake up late (or lay in bed half the day✋) you can still be healthy and productive and the day is not wasted! Definitely something I needed to hear right now. A little tip for the avocados if you put them in the fridge before they are ripe they will never ripen. But if you put them in the fridge once they are ripe it slows down the process and they last a really long time and be ready to eat when you want them!

also yes salting the onions is to draw the water out. & if you're roasting vegetables, it can be good to salt them after they come out of the oven, because salting them before they cook can draw out too much moisture and inhibit browning. it's not super important but it can help with some vegetables that have a lot of water, like zucchini

i would like to give you a recipe for you to try. i hope you do this at home and enjoy it. it is a basic soup recipe from turkey. ingredients: a cup of green lentils a cup of noodles (you cannot find it in the usa so just use any small size pasta you have) 1 yellow onion 1 tablespoon tomato paste 8 cups of water (with vegetable stock -amount is up to you) quarter cup vegetable oil (we use sunflower oil or olive oil) 1 teaspoon salt half teaspoon chili flakes 1 teaspoon dried mint or oregano 1 teaspoon black pepper -this recipe takes around 30 mins and it is for 6-8 people so if you are not sure you may not like it, reduce the amounts by half boil the lentils for 20 mins, then drain them. put the oil in a pot and add the onion in (cut the onion into small cubes before this step) after few mins of mixing add the tomato paste then mix well for a min then add the water in. add the lentils and pasta to the pot. cook until pasta is cooked then add the salt n spices to the pot and mix. after this step turn off the stove and after few mins the soup is cooked

I would love to see you cut into one of the avocados. I had the same... problem? Situation? as you not so long ago. The avocados were really hard even after like maybe 2 weeks or so. So at one point I juat committed to it and cut one open. They were moldy on the inside! The shell was so thic that I didn't notice that they were ripe at one point. Long story short if you have avocados that don't seem to get soft just cut into them and check how ripe they are.
@juliealeman1947

Typically I would say keep avocados out on the counter etc.. to ripen and in the fridge to last longer (once ripe too). P.S. my Mexican mother says keep near bananas or other fruits to ripen faster.

salting onions before cooking them is unnecessary imo. if u wanna draw out water faster, use a sprinkle of baking soda. not only will this draw out water but it will give the onions a more caramelized taste. i will salt before cooking if i am boiling veg but not when i saute veg bc you lose a lot of the salt flavor but the they still contain a lot of sodium. not that i watch my salt intake really but it's something to think about. overall, the short amount of cooking time it saves to presalt sauteeing veg isnt worth the high sodium content when the same salted flavor can be achieved w less sodium by adding salt at the end. idk why i cared so much about this to write a short paper on it but here we are.
