@@Bay_0k Well espresso is between 1:2 - 1:3 but standard is 1:2 or alittle bit more. This is a lungo just with a lesser yield at the lower range of of the ratio.

People come into the cafe asking for this and I've always wondered how this works in other cafes....how do you not over extract the espresso by pulling long shots? Wouldn't going 10-20 grams over your recipie that you dialed in for make the shot taste bitter and over extracted? Wouldn't adding said grams in water AFTER the shots been extracted to its optimum recipie result in a better espresso?
@taylorjordan1122
@taylorjordan1122 2 жыл бұрын
I wondered the same thing. His shot timer said 30 seconds but he had about 50 grams out if I saw correctly. That's a lot of volume output in 30 seconds. My Breville Barista Pro can't do that I don't think
@Nikeel_A.W
@Nikeel_A.W 2 жыл бұрын
@@taylorjordan1122 Tbh that's hard to determine because machines can pull radically different shot times. It's more about the coffee being used. I work with a la marzocco linea pb and we have medium roasts that will pull 40 grams in like 28 seconds and then others that will pull 40 in 15 and they both taste good. Which leads me to what im thinking makes this possible is that you need a recipe dialed in for a lungo shot. But just pulling a great tasting long shot on the fly is probably bullshit because any cafe with good espresso already has a recipe that was painstakingly adjusted for that specific day.
@mrdisco8616
@mrdisco8616 Жыл бұрын
Replying to this late but yes this impractical for cafes, you’re putting more water through the coffee so to make it taste good you would want less pressure, a coarser grinder, etc. All things that you can’t do in a cafe unless you’re going to dial a second grinder and/or machines for lungo or allongé.
@Nikeel_A.W
@Nikeel_A.W Жыл бұрын
@@mrdisco8616 Hey. I've learned this since but thanks! I usually just dose up enough to increase extraction, and go a little coarser but I find with a good medium roast you don't even need to change the grind Edit: Of course even that going well depends on a lot of variables too.

There was some renewed hype about it with Lance Hedrick's and Brian Quan's videos, but I'm really curious to see it put head to head against some of the other manual levers around that price point, i.e. Flair and Robot, especially in terms of shot quality.

Neat videography, but without definition & context, the video doesn’t fully educate us. It may be a short video, but defining Lungo, and what you are actually creating, would really tie things together. e.g. Def: caffe lungo, or a long shot, is a longer pulled shot with more water, sort of like a mini americano.
