Ruler class servant's can identify servant's true identity merely at a glance.He also possesses the noble phantasm in a form of clairvoyance that allows him to know everything he wants to know about something (that's how he knew that Iori and Saber would take care of piece of quartz without him doing anything) so he don't even need to remember Rouge Lancer in order to know about him.....Rouge Lancer himself i believe didn't exactly remembered him but indeed was able to recall some things but mostly it was his own deduction whitch was right on the money😂

Depending on where boss is in his story, the answer to zhou yu would be yes. On the other hand that version of boss probably would have already tried to kill zhou yu and saber.
