Penne with Cauliflower and Green Olive Pesto

This is a simple - and economical - pasta dish that features a deliciously easy pesto made with green olives, walnuts and parsley. This sauce is versatile as well, you can use it on any number of different dishes, including chicken or fish. Also - cooking a vegetable along with the pasta, in this case cauliflower, is a great way to stretch a pound of pasta with healthy ingredients, without dirtying another pan. You could do the same here with broccoli or broccolini, green beans, or snap or snow peas. Oh… my Mama made it with broccoli. Pesto not so much but the whole ingredients. My Dad was very picky. So she left the florets small but whole. Pine nuts, olives and herbs. Olive oil and pasta water. So simple!!!! So good. Love it. Grazie Lidia!!!!

She mentioned brine, so no. Brine is essentially salt water with perhaps some seasoning (think of pickles).

I think the man who keeps throwing spaghetti on the wall is testing his wife more than the spaghetti. If she communicates to him the reasons she doesn't like him messing up the kitchen walls in their home, and he's not caring enough to stop it for her, he needs to give more attention to marriage counseling than making video's for Lidia.
