I always enjoy your show, Lidia. So did my blessed and beloved mother. Her family was from Sicily. They sailed from Naples to New York before she was born, obviously. She and her siblings were the first to be born, here. We lost her last year, she was 91. But your show helps me remember the fun I always had with her in the kitchen. She especially always loved it when your mother was on the show. God bless you both and thank you.😊

One of the first meals I made for my new husband and several of his GI friends. I honestly don’t why I knew how to make it but I watched you and by gum, I did it right…I learned to cut up a chicken when I was 8 years old…( out of necessity). We had a crusty bread and a good wine they brought….i cooked this in England 56 years ago…when finding all the ingredients wasn’t as easy as you might think. I prepared the tomato’s myself..not the same kind as I would in later years…when I canned my own. Thank you for making me feel so good about as you say..using common sense.

I had to laugh when i saw Lidia save the backs for soup. It so reminded me of my grandmother who made something she called "Social Security Soup." It was the meal she made when there was too much month left at the end of the money- hence the name. In those days her grocer got whole chickens with just their heads missing. His butcher would cut up the chickens and if the customer wanted the necks and backs he would put them in with the giblets. If not then they would be trashed. My grandmother and he had a little game. She would come in an say that she found a stray dog she was nursing to health and wanted to make it some chicken broth and the butcher would wrap up some necks and backs and give them to her for nothing. The dog ruse was so people would not think she was begging for food for herself. She woulld then buy carrots, celery, and an onion or two, and a small box of barley at a price in the 1950 that was less than $1.25 for everything. She would then boil the necks and backs and cut up and saute the vegetables. Everything would then go into a pot of boiling water seasoned with chicken boullion or broth and then the barley. Add to that a generous amount of black pepper and salt to taste and you have a hearty and cheap soup. With a loaf of buttered bread and a glass of wine it was heaven. I'm 74 , older than she was when she first made it for me. She never saw her grandkids. but they have all enjoyed that soup and now make it for their own families. And they don't have to beg the butcher to make it. We all can still afford chicken.

My recipe for chicken cacciatore came from my Sicilian mother-in-law. She baked it in the roasting pan with poatoes, celery, and peppers. Then the last 15 minutes you add the peas, mushrooms, and olives. The first part also includes the tomato sauce. And we added rice to serve at the table. There was always extra veggies for some reason, so we added pasta to it for another meal. Also, I say an Italian table is set with knife, fork, spoon and bread.

I have always thought I didn’t care for cooked peppers, but now, I’m trying them out. I see how good the cooked peppers look! I had a gastric bypass, and have difficulties eating much, but some foods are much easier to eat! I also have acid reflux, so I’m always looking for foods that don’t cause the burning. I love raw peppers too. The raw kale pesto looked very good too! I’m not fond of kale or cabbage cooked, but raw 😋.

Such a simply delicious dish and the rustic bread with cheese really adds to it . Polenta underneath would give it an extra kick, or serve it Cuban style, over rice !
