My Nonna used to make a Pesto with parsley, garlic, olive oil and anchovies. We would eat the fennel dipped in the Pesto with Italian Knott bread, it was great. She also made a dish with Cardoni cooked with anchovies, I don't remember the name of the dish or the recipe but it was really good. This was 50+ years ago, I wish she was still here !!

The skin is delicious. I often buy the skin on salmon. You just have to make sure it has been scaled properly. It’s where a lot of the omega oils are located.

Nobody can "buy" FRESH fish!!! Fuck....the kitchen is absolutely gorgeous but...F... Buying "fresh" fish is 2035489032905732525208205% impossible! The only way to get truly fresh fish is to gut and cook it immediately after catching it. This is NOT "fresh" fish. LOOKS amazing! But it's not "fresh fish". Because it's bought. I have no doubt it tastes amazing too! But it is not at all "fresh".
