My Nonna used to make cannellini beans and escarole soup with carrots, celery and onions.Grated pecorino or Grana Padano. Very simple, but it was magic with a piece of toasted bread for dunking. Thank you Lidia.

Oooo! Love the idea of leeks as part of the soup base instead of the usual onions. Never thought of baking a ham and cheese sandwich. Will try both these ideas! Thank you for posting.
