In this video, I'm pulled over at a rest stop putting together my salad for lunch.
Just having a chit chat with you about my time spent in Christansburg, Virginia.
Such a lovely town where I enjoyed Cracker Barrel to sleep, a place to get my fresh water refilled, a Planet Fitness for a shower and a local park for both working out and relaxing.
Best of all, Laura caught up with me on the road and we've been hanging out!

Your mat would be great under your mattress also your skin looks so much better and more hydrated compared to your older videos. I just drove Interstate 81 N all downhill. I got great gas mileage. I smiled all the way home it was my first solo trip 500 miles.

Hi Lulu, When you put onions in plastic it leaches out the plastc.. that's why people put an onion on an infection because they draw the infection out. I put it in a glass jar.

Great looking lunch. I am going to have to try those Japanese sweet potatoes again. I tried them a while back but ate them hot and really did not like the taste. So, maybe they will taste better cold. Glad you mentioned eating them cold. I will give them another try. Love seeing how you put your meals together.

Good morning! Shenandoah Valley is beautiful! I hate 81 though, because of all the trucks! Also, just an idea…I make 3 salads at a time every 3 days. That way I just have to pull one out and not have to cut up vegetables every day, and be tempted to make poor choices!

Lulu, you now have me hooked on Oriental Sweet Potatoes! lol I could not find any this week and panicked ! lol And, I agree these potatoes cold are delish. I like to cook them plain, or with Thyme or Cinnamon too....changing it up is fun. Loved the description of you and Laura waking up, both opening your doors and chit chatting in the morning air. Such freedom that it sounds fulfilling! Keep enjoying the road and your stops ! :)

I bought some of the new seasonings and used it to season the egg plant that you showed with us how to prep. I like the egg plant without all of the stuff my mother used to mix with it. Thank you for the things you introduce to us. I’m trying to develop a taste for nori. Maybe by the time I get through the package I purchased I’ll like it. If not, it was just a new experience.

We have a fifth wheel and vacation often, we have access to a shower and could bathe every night but we don’t. We clean up with a sink bath or use wipes we get at Sam’s club. I pop the wipes in the microwave for a warm clean up 😊

Hi Lulu, Happy to know you are doing a standing exercise routine like I do. I don't at all like getting down on the matt because my body objects. What I do is use an exercise cable with handles which locks into your closed van or car door and you can do any exercise this way. You can move the cable up or down to fit the exercise. I brought it to the NH Meetup and that's how I didn't end up missing my important workout!

she is my trainer at home. she was referred to me by my chiropractor. I bought a hybrid package from her. half the sessions are in person (she comes to my house) and the other half are zoom so I can use them when I travel!! 😊

We lived off 81 for 10 years in Strasburg VA. We usually took highway 11 instead of 81 because of the semi traffic! It is a beautiful area if you dare take your eyes off the road to look around. Have you noticed the 3 crosses someone put up years ago, commemorating Jesus and the 2 thieves?
