Light andCrispy Beer Batter Shrimp
This Beer Batter Shrimp dish is delicious.
Although we used beer in our recipe, you can also make a simple tempura without the beer and substitute with carbonated water.
As you review the recipe, keep in mind to keep everything as cold as possible throughout preparation.
Recipe:
Ingredients:
1 lb- fresh shrimp, peeled and deveined. You can clean yourself or get the shrimp already cleaned. Our shrimp was already deveined in the video.
1/2 cup- all purpose flour
1/2- rice flour
1 each- whole egg
8 oz- cold beer
1 tsp- salt
1/4 cup- corn starch
oil for frying
Method:
Peel and devein shrimp.
Butterfly shrimp by scoring the top of the shrimp from the head to the tail.
To prevent the shrimp from curling, lightly score 4-5 slits the underside of the shrimp, turn the shrimp over and gently press to straighten the shrimp.
When pressing, you will feel the flesh separate.
Place the shrimp in cold water to finish cleaning them, remove and pat dry with a paper towel.
Combine corn starch and slat on a smal plate for dredging.
Sift flour and rice flour into a mixing bowl, set aside for now.
Lightly beat one egg, do not over mix.
Add the beer and stir together, keep in mind not to over mix.
Add flour mixture a third at a time, and stir with a fork, do not over mix, some small lumps are fine. Just combine enough to form a slightly lumpy batter.
If the mixture is too runny, add flour, if the mixture is too thick, add some cold water.
Heat oil to 350F.
Roll each shrimp in the corn starch enough to coat.
Dip shrimp into the batter and them swirl into the oil.
For extra crispy shrimp, drizzle extra batter with your fingers onto the shrimp as they are frying.
Remove when lightly golden brown.
For the dipping sauce:

1/4 cup- sweet chili sauce
2 TBSP- soy sauce
1 tsp- chopped garlic
1 tsp- lemon juice
1 tsp- fish sauce
1 tsp- oyster sauce
Method:
Add all of the ingredients in a small mixing bowl and combine.
This is our favorite dipping sauce for fried shrimp, you can also jut make a simple cocktail sauce, or anything else you prefer.
