This week's video is lime cheesecake!
The cheesecake has a rich and smooth texture
and there is a light refreshing cream on the top.
It looks good and also tastes really good!
I made it for a friend's birthday and everyone loved it.
It's a cake that goes well with the hot summer like these days.

▶Ingredients (for 1 round cake mold (15cm in diameter))

-70g Whole wheat biscuit
-35g unsalted butter
-10g sugar
[Lime Cheesecake]
- 230g cream cheese
- 70g sugar
- 70g whole egg
- 80g heavy cream
- 50g sour cream
- 5g cornstarch
- 4g vanilla bean paste
- 3g lime zest
- 10g lime juice
[Lime Cream]
- 40g lime juice
- 2g lime zest
- 50 g eggs
- 70g unsalted butter
- 35g white sugar
- 0.5g sheet of gelatin (200 bloom)
[Lime whipped ganache]
- 100g heavy cream (A)
- 2g lime zest
- 45g white coverture chocolate
- 1g gelatin sheet
-100g heavy cream (B)
*Storage: can be stored for up to 3 days refrigerated, 3 weeks frozen. Store in an airtight container to prevent the surface from drying out.
