A must bake "Lip Smacking" Lemon Pound Cake! It is super moist and full of luscious lemon flavor, all smothered in smooth lemon glaze.
Ingredients:
Cake
o 2 ¼ cup all-purpose flour
o 1 ¼ cup granulated sugar
o ¼ teaspoon salt
o 1 teaspoon baking powder
o 3 large eggs
o 1 cup unsalted butter
o ¼ cup sour cream
o ½ cup milk
o Zest of 2 lemon
o ¼ cup fresh lemon juice
o 1 teaspoon vanilla extract
Glaze
o 1 ½ cup confectioner’s sugar
o 1-2 tablespoons heavy cream or milk
o 2-3 tablespoons lemon juice
o ½ teaspoon vanilla extract
Instructions
1. Combine flour, baking powder and salt in a separate bowl, set aside for later.
2. In a mixing bowl beat butter on medium until smooth. Next add sugar and mix on medium. Add in eggs one at a time mixing after each. Add in sour cream, lemon zest, lemon juice and vanilla extract and mix until smooth.
3. Add dry ingredients, to mixer on low. Rotating between adding the flour mixture and milk.
4. Pour batter into a buttered and flowered loaf pan. Bake at 350° for 50 to 60 minutes, or Until and inserted it toothpick comes out clean. If starts browning to fast, tent with foil.
