I have a Toffee company and have made hundreds of batches of toffee over the years. I still use the same stainless steel pans and whisk every time. In the beginning, many years ago, I had separation. What I did changed my toffee forever and I never had separation again and it was so simple. I added another 1/4 teaspoon of salt. Instead of a quarter teaspoon, I use a 1/2 teaspoon and it worked.

If crystals form on the sides, you can put the lid on the pan for a few moments and this will allow the steam to wash them down, or you can use a wet brush on the sides and the steam that forms will wash them down.

I'm sure the recipes are great BUT all the interruptions of "answering the questions" was very distracting and seriously detracted from the point of the video. Why can't the "questions" be answered at the end so that people who just want to see how something is done.......can have that. Then everyone wins.

I just used that instrument in your hand. I poured it in a cake pan . After it cooled, I flipped it over and, broke it at the same lines. I did this recipe in the microwave. 4 minutes on high, stir in butter and almonds, 4 more minutes in the microwave, then 3 minutes, then 2 minutes, done.

Good to see this tutorial though. I grew up in Asia and there we could always buy imported almond roca for about 20 bucks a kilo and it has been my favorite sweet since then. These years, I move to Europe and found out that I couldn’t get almond roca anywhere and on Amazon, it cost about 150 Euro and that’s about 180 USD for a kilo. That’s ridiculously expensive.

Hey Ashlee. I’m from India. Your awesome. I tried these but still not perfect. First time the butter and sugar got separated. Another time I think it didn’t reach the toffee level and I just poured it over almonds. Third time it was thick slab. Yeah but ur video is of great help. I’ll try accordingly

I make it on the flat sheet every Christmas season (along with fudge, peanut butter fudge, divinity and peanut brittle :) but I’ve always wondered how one could make it almond Rocha style so thank you! Looks like way more work but totally want to give it a shot... gotta get me one of those molds! :) I always have a mini heart attack whenever I make candy esp my divinity heh but it’s oh so worth it :) both my grandmas specialized in divinity and fudge so I had to keep up the tradition :)

I would pour the candy layer into a baking sheet then after it was cooled pour a layer of chocolate on top, after that solidified you could flip it and put chocolate on the other side

If you don’t have melt chocolate on your microwave . Maybe defrost will melt chocolate I would try it but I can’t do things I used to because of medical reasons.

happened to come across your toffee video...just love it.. you say your water boils 20 degrees lower at altitude 4450 ft....i live in Colorado Springs altitude 6,035ft my water boils at 206 degrees why a big difference

that's one of the reasons it's so important to test. Altitude is important but so is the thermometer. I do the test every time I get a new thermometer and it's always a little different. according to professional sites, I shouldn't have to adjust by 20 degrees, but my own thermometer test is the most accurate.

Double BOILER.....not a double broiler...a broiler is heat flames or element heated to very high temps to brown melt or char the surface if any food under that high heat very close to the food.
