For the ramen noodles, I put a tsp of vegetable oil in the dough and I don't have that problem. Also, make sure to since them in cold water after you cook them. The hot broth will warm them up again, but they won't stick.

Jasmine Fountain I do a few things. I save tons of $ by shopping for produce at a store called .99only. I usually find organic greens there. I shop the store circulars as well. I also meal plan for 5-6 meals per week. Cook big batches for work/school lunches. A typical week for us for example. Mon: chow mein stirfry w/springrolls Tues: Fajitas w/beans/guac. Wed: Boca Burgers/onion rings/slaw Thurs:pasta w/ mushroom&peppers/toast/salad Fri: potato and leek soup topped w/asparagus/garlic toast. I buy Gardein products.

+Stance Punk Yep you have it, a drop of sesame oil would be just right in keeping with the Asian sense of the dish and stopping the noodles from sticking; exactly the same as in Italian cooking a putting in a small glug of olive oil to give the pasta a slickness and keep it from clumping together.

Next time you make sweet potato burgers, put more of the beans and rice (or other things like nuts, mushrooms, seeds or lentils). You'll get a much less mushy burger. Also, you can stir some nut or oat flour into the mashed sweet potato to get a firmer texture. I make big batches of sweet potato burgers all the time, they are incredible. Usually mine have brown rice, sauted onion, spinach, sunflower seeds, walnuts, maple syrup and chili peppers. They are out of this world.

Great video and tips !For the noodles not to stick you need to boil them in more water so you won't have flower in your water and after that you need to wash the noodles with cold water constatly mixing them so they will not stick togheter.

I love your channel, what a great video with amazing recipes. For the noodles, I would rinse them under cold running water to wash off the extra starch which acts as the glue that makes them stick. The cold water also causes the noodles to contract so they're more springy with a good "bounce" when you chew. The hot broth added when you plate up should warm them back up sufficiently so you can start eating immediately and not burn the roof of your mouth. Well done on your channel!

As someone who is a chemist, I figured you may be interested to know. The baking soda (Sodium Bicarbonate) is unstable at high temperature, even as low as the 250 you used. What happens is it is transformed from NaHCO3 --> Na2CO3, releasing water and carbon dioxide in the process. This makes the noodles more "alkaline" which may be a mispronunciation because sodium is an "alkali" metal

I suggest straining out the broth and then boiling it on high for a while to reduce it. Less water = more concentrated flavor. Then cool and add coconut cream, etc. Also, try boiling the noodles in more water. That water was cloudy. They're covered in flour and the water was full of it, so when you drained they were still sticky. More water and move the noodles around.
@Hostilegeese8 жыл бұрын
alkaline means that it has a basic PH (over 7), or more in depth it means that it contains a substance (usually a salt) which will dissociate and react with water in a manner that forms more hydroxide ions (OH-) than hydronium ions (H3O+) baking soda (NaHCO3) will do this with no extra help and in reality putting it in the oven just makes hot baking soda (still NaHCO3)

After you make the ramen, put it in a bowl with some flour and then toss it until the noodles unstick, then make sure that when you cook it that you have the water at a boil already before dropping it in, separating the strands as you do (if any are sticking). It can also help if your noodles are chilled a bit.

I don't understand why some ppl state to rinse the noodle in water. In any Japanese ramen restaurant, here n Japan, you don't wash he noodles omg!!! If the noodles are made right it should not stick. Boil it by portion, shake it up n down in a hard straight motion to strain out he excess water, pour it into howl ladle broth over n be sure to separate noodle by quickly with chopstick or whatever convenient. For noodles made from rice, normally it is rinse under cold water but not with ramen noodles !

Baking soda is sodium bicarbonate, which is mildly basic in water (pH slightly greater than 7). Alkaline is another word for basic. So it's the baking soda that is making your noodles alkaline. Not sure what cooking it does though.

Do you have to bake the baking soda? It is supposed to make doughs rise when it gets hot, but if it was already baked, maybe the rising aspect is spent. Did you only roll your ramen on the first setting? I believe the more you roll it, the chewier it gets. Maybe it will be less sticky and soft also.

The answer isn't oil.....after you cut the dough into noodles you must toss the noodles in some sort of flour or starch. This draws out excess moisture that resulted in the clumping.
