As you probably know, whole crabs in general are difficult to find in your everyday market. Live crabs are, of course, even harder to find. But I've struck gold, and it's even better than regular old live crabs. Today, we're making sushi from live soft shell crabs. Soft shell crabs are an absolute delicacy. You can eat virtually the entire crab, and it's one of the juiciest things you'll ever experience. They're typically Japanese blue crabs, oftentimes from Maryland. And when you wrap this all into a sushi roll, you get something truly special.
I want to take a moment here to also thank you all for 1.7 million. It's been such a fun journey and it is my hope that this is just the beginning. Let's keep making food together!

Not to b too critical, as someone who has handled every stage of blue crabs for over 60 years, your crab is past the true soft shell stage. What we call in the trade a papershell. Too much time elapsed after the shed and the shell has started to firm up. Good for bait but too firm for the table. The giveaway besides the texture is how active the crab is. A true softshell will be almost lifeless after the exhausting shedding process. Only two ways that this occurs. Either whoever is tending the floats is stretching the grading process considerably. Or the cold chain wasn't maintained below 38 degrees at all times to prevent the completion of the shell hardening after harvest. Good video overall.

@TONY ALFY Hi biology major here. Crabs have a brain. All brains are not the same and function the same but through classification crabs do in fact have a brain. Its a feature of all living creature (except plants) to have a form of brain which which can be as simple as a mass of nerves and neurons

@@arneldejesus9707 they have "gut" like stuff between the gills that is not meat, it needs to be removed before eating. And they also do have "bone" on the inside. I live in Baltimore and eat steamed blue crabs all the time.

My favorite uncle used to work there and we would always get fresh seafood, Not only did he worked there, He was even a chef and a baker, He would make the best seafood soup, He passed away in 2021 from cancer 😭🤧 He did my hair when I graduated 5th grade, He would also style my hair during special occasions, He would treat me like if I was his daughter, One day he took me to a field trip with his friends from work, Everyone had kids except for my uncle, So I pretend to be his daughter on that day, That way, He doesn’t feels left out you know? I miss my uncle

Random fact: the California roll (rice outside, nori inside) was invented in the West by a Japanese chef. He wanted more westerners to have sushi, but they didn’t enjoy seeing nori, so he flipped the ingredients around and it became the California roll

I live next to a bay and we have a bay house with a pier. On our pier we have crab traps that catch blue crabs daily. Out of my thirteen year life on this earth, I have only caught and eaten one soft shell crab.

I am Korean and we call nori and rice gimbap. Gim means dried seaweed and bap means rice. No it is also not pronounced as gim in english but more like geem because of the Korean-english accent we have.

my gf is a sushi chef and she said less foretake (only as garnish) , and no need to press down the rice, but mostly focus on the edges of the seaweed. Also, when cutting the sushi, just on motion of the knife instead of back and forth motion. ALSO use saran wrap on your bamboo sushi roller in order to avoid rice stickie.

@@malikes4591 he’s actually an utter idiot, with so many lies and inaccuracies in his videos. For example, in a short he called a “hidden rose apple” - a variety of apple, a “rose apple”- a completely different species not in the video- think pineapple, custard apple, stone apple. He said that his American eel was “sustainably sourced” that’s a lie, there are no sustainably sourced American or European eels as they cannot be captive bread so are wild caught as babies and grown- unsustainable, and finally in this video it’s different with crabs because they are such simple organisms- tbh there’s even debate to weather or not they can feel pain, but basically they have two brains called “ganglions” and Nick only destroyed one of them, so the other takes a while to die. Splitting it down the middle immediately afterwards would’ve finished the job. He is full of lies.

Nick here is a tip for when you need to pronounce the word furikake: Fu - food without the d at the end Ri - eric without the e and c Ka - cat without the t (and emphasis goes on this syllable) Ke - kept without the pt All together one word

Your batter isn't sticking because you didn't flour the crab. Also add tiny bit of corn starch or sweet potato starch along with tiny bit of baking powder to have the Tempura batter crispier and lighter. You can add the furikake to the batter to have the same effect. Please do not handle or press the shari (sushi rice) so hard. Remember, you are making sushi, not mochi. Torching the avocado is a good idea, however you might want to add other elements to lighten the roll a bit by adding cucumber or thinly sliced green onions. If people want a vegetarian substitute, try maitake mushrooms, black trumpet mushrooms or asparagus. Tastes fantastic.

Hey Nick! If you put the rice at only two thirds of the nori, you are gonna end up with a much nicer roll, you won't have that extra piece of nori inside, and it will be more round. But ower all very nice vid! Edit: this roll was quite thicc, so you could not see that nori inside the roll.

Just some advice about pronunciation for Japanese words: When saying words like Nori, Tempura, or Furikake, the R is like a mix between a R and L Sort of like rolling your R’s If this is confusing, you can just look it up on google translate Hopefully this helps
