1. Cut the liver into small cubes 2. Season with salt and pepper 3. Using a skewer, grill them over charcoal. 4. Serve with pita bread, roasted peppers, fresh onions and lime. Trust me when I say this is the best way to have beef/lamb liver. It’s actually a common way of serving liver in Iran.

As a younger man I didn't care for liver but my wife made it for us one night and turns out the trick is don't overcook it, once you go too far past medium the texture gets grainy and chewy, now it's one of my favorite meals when cooked medium, some pink visible still, though we do like 2 whole onions and of course mashed potatoes.

@joeschmoe3815
@joeschmoe3815 10 күн бұрын
@@ilovepeoplebroSeems like you also fell for propaganda. To harden unsaturated fats you need to hydrogenate them - that means add hyrogen to get rid of the double bonds in unsaturated fatty acids - which gives you saturated fats. If the hydrogenation is incomplete you get trans fatty acids which create far worse health problems. Most commonly found in margerine is the trans fa Elaidic acid, which is known to raise LDL cholesterol, especially in women --> arteriosclerosis. Glycidol is another problem. The health benefits of margarine are grossly misrepresented in advertising. That doesn't mean one should eat half a block of butter daily ofc. The developed world consumes just too many fats while at the same time not exercising enough.

You could also try adobong atay. Yep, its Filipino adobo that uses chicken liver. Simply marinate it in soy sauce, calamansi or lime juice, pepper, and bay leaves. I marinate mine for about 2 hrs. Then sauté some garlic, onions, then the liver until they have browned. Pour in the marinating liquid and cook for 10 to 15 minutes. Put then some veggies like green beans or snap peas. Wait for them to cook but they still need to be a bit crunchy for that texture. Serve with white rice and enjoy some delicious liver.

Had the best Liver and Onions when I was working cattle for a neighbour and generational family friend(s). My grandfather knew their family as far back as when they were Pioneers of this Northern Farming Community. They broke land, pushed bush, drained swamp and build the roads ditches and everything in between. I was fortunate enough to somewhat know the man my grandfather farmed alongside back in the day and worked for his son who was in his mid-late 50’s. I was 21 at the time and was always invited in for lunch after feeding/ watering in the mornings and checking for calves. Maybe it was the -40c weather or the sheer physical drain it takes one man and a boy to look after a thousand head, but his mother used to cook up the best meals I’ve ever had. Not to discredit my own mother but those meals resonated differently and I felt blessed and thankful every time. The whole experience helped shape me into the man/ farmer I am today, that I owe to one family and a man who I consider a mentor and friend to this day.
