Today, I will show you a way to prepare a special dish, bengali thali mutton kosa with plain rice, vegetable curry,alu posto,rasogolla and chutney. It is one of my favorites food recipes. So true! Best thali is what you eat in someone’s house. Growing up my relatives always served food in this manner and it was so light to eat and delicious.

The above video is West Bengali thali. Foods like mishti polao are eaten Only by a small minority of total bengalis in the world. Bengali thali and food is found in Bangladesh 🇧🇩. Majority of Bengalis and pure bengali food is found in east bengal 🇧🇩

Good video and presentation sir, but one thing I should point out that there's no such thing as "Bengali Thali". Reason being, as you said a 'thali' typically means 'a platter of different dishes served together' but Bengali cuisine follows 'Service à la russe' which means 'courses are brought to the table sequentially, and the food gets portioned on the plate by the server before it is served to the diner'. So in Bengali cuisine you are not supposed to jump from one item to another and back during your meal but move on to the next item once you are done with the previous. The dishes are also put in order based on their flavours, the lighter one being the first and gradually increasing the intensity and complexity as you move towards the end. This is very much different from other Indian dining manners. Even in the video, they did put all different items together in a thali, but Mr Sengupta guided you through the meal one dish at a time, starting with 'shukto' which is the right order to go with a typical Bengali lunch.

This is so true! Bengali Ghee is the best. I've never found that ghee in any part of the country. Even Chef Sanjeev Kapoor also said the same.

Bengali cuisine is best when you prepare it at home unlike North Indian dishes which people like having outside only, so they have gained more popularity. After having every cuisine of India I can confirm east Indian cuisine is far better than others

Bengal has largest varity of food among all Indian states(As for favoriority of both veg and non veg food) Bengali ghee is unique in India and unlike from other states it's aromatic. It's flavour comes form it's long time preparation. Bengal has significant influence of french culture over it's food.The whole starting from bitter to end eating sweets is same as hors d'œuvre or entrée in France. Eating rice with multiple side dishes everyday two times is common to most bengali households,regular meals from other state are simpler. The dish shukto has some sister dishes on Malayalam cuisine but completely unknown to rest of India. Bengalis use Panchforon for heating ,which is very uncommon to other states. ..... and many more

Assam, Orissa, TN, Andhra, Kerala, Karnataka, Majarashtra, Gujarat all these states have variety of dishes and bitter, sweet, sour, savoury, pungent dishes to balance flavours.. Panch phoron is used in Orissa, Bihar as well.

Yes a lot of people are vegeterian in those states and don't have the dishes made of of fishes and seafoods. Breading of fries is rare in other states of India.Types of sweets are highly variant in bengal than all other states,every sweet shop contains at least 20 variants of sweets which is extremely rare in any other parts. Food of all tastes are available in other states too but regular people don't eat everything everyday,most for occasions. But bitter,starters,main course and sweets are part of every meal for Bengalis. Food from orisha are very similar to bengal but I hardly doubt using panchforon in actual bihari cuisine.

the problem is you have not visited other states of India or you never had friends other then bengalis. You have only eaten and tasted bengali food and never tried anything else. Sabko apna culture aur cuisine dusro se supirior lagta h. People of other states also think that bengali food is all about macher jhor ,bhat, rosogulla, sandesh, this is what they have seen and heard through media . But we all know that its more than that. Each and every state of India is equally great and have the same love for our motherland.

I belong to an east Bengali family, I can say that we do have the richness of spices in food.. The Chef completely misrepresented the cuisine of Bengali food in Kolkata. Bengali food presents both East Bengal & west Bengal & fusion Chinese food & many other foreign fusion cuisine cone into that list. This show was meant to show Bengali thali as chef Kunal asked in the beginning of the show but it ended up representing the host chef's choice of Jamindar thali. I really love this show. Even being a Bengali from Kolkata, did not get the flavour of kolkata in this episode..looking forward to see an authentic bengali thali episode where both the Bengal (east & west), which once it was One, represented on thali.

Bengalis never eat fish and meat with two hands...real bengali eats fish and meat using one hand..😎 Its literally very funny if Chef Kunal was attended by my Grandmother instead of Chef Sengupta...she will definitely show the direction of eating by one hand.. through her warning " বাবা বাঁ হাত যেন এঁটো করোনা, নয়তো লক্ষ্মী রাগ করবেন" ( son don't stick your left hand, otherwise laxmi( Goddess of Abundance and wealth, who generally likes pure )..will get angry).. Miss her so badly..😢 And many many good wishes to both Chefs♥️

There is a proverb in our Raj Bhasha Hindi, aap ruchi khana par ruchi pehenna ,so if some one is eating with his both hands where is the problem let him enjoy his food, because we Bengali from our childhood trained & taught by our parents not to eat with both hands, but in other parts of our country it's very common thing eating with both hands so please 🙏 don't get disturb by his eating style simply enjoy &see how he is relishing our Bengali cuisine 👌😊

@@LivingFoodz: I noticed you asked what "Paturi" is. It's an exact equivalent of the French 'En Papier'... But I suspect 'Paturi' predates it by quite a few centuries. It was originally made with 'Ilish' (Hilsha) fish. The Banana leaf is cleaned and then blanched or lightly roasted over a flame to make it flexible. All the ingredients with the marinated raw fish are added and tied securely. It can be dry roasted, steamed, or shallow fried at the final stage.

11:06 wrong wrong. East Bengali foods contain more onion and fat. While west bengali food is more subtle with flavor on mind, east bengali spice quotient is a little high and a bit tempered. There's a small hint of sweetness in kolkata food with ginger and garlic, in east the sweetness is mostly absent. East prefer food more fried, hence oily. But in overall sense there's not much of a difference in basic ingredients other than spice, onion and GG paste.

You should explore East Bengal cuisines too. Today all over world Bengali cuisine implies mostly West Bengal cuisine. We mostly don’t take into account the equal number of Bengalis living in Bangladesh and parts of North East (some in West Bengal) too. I highly recommend all of you.

@@aharnishchowdhury3474yes,, around the world most bangla cuisine restaurants run by Bangladeshi and Most popular dishes refers to east Bengal. And also mr. Sen misinterpreted the difference between two banglas that east Bengalies use only oil with only chili turmeric. But it’s highly accepted that east Bengal use much more onions than West Bengal along with Ginger, garlic, cumin, coriander, and garam masala. Even east Bengalis often use nutmeg, mace, various nuts as red meat is hugely consumed here. On the other hand in west Bengal coconut milk and pachforon masala is used more.

​​​​​@@azwadahsan8549In West Bengal, India when we discuss West Bengali & East Bengali cuisine it's about the cuisine of the Hindus i.e. Ghoti & Bangal, hope you understand. Bangladeshi food all over the world is generally represented by the Muslims., which has lot of differences from the cuisine of the Hindus. If you say pure Bengali food you have to time travel as muslim rulers came to Bengal at around 1200AD just about 800 years back after which mass conversions begun, Bengalis have been living in this region for much longer than that. Present day Bengali food be it Bangladesh or Indian is a fusion of a lot of other cuisines, so it would be wrong to term any as pure.

The East Bengal side of cuisine also indulges in a lot of garlic onion and ginger. In fact Hilsa is also prepared with this kind of spices.

Madam.. I would like to correct your statement a little bit... After partition.. When the muslim population rised in Bangladesh... The usage of onion garlic ginger as the common base ingredients became more popular.. As you can understand they are muslim.. More non veg oriented.. But my grandparents from dhaka.. Who were there at that time of undivided india... Hindu.. They exactly knew what ingredients to where.. Never ever they used to put onion garlic ginger as base ingredients.. In every dish...

@@ankitahalder770 I never mentioned onion garlic and ginger were used as base material in every dish. Before partition Muslims were not there? My grandparents also came to India around the same time.They were alsofrom Dhaka. Dhamrail. I have also visited Dhaka afew many times.

And talking of use of onion and garlic..ginger... In all sorts of dishes..and in every form is very much noticeable in their dishes.. Whether it be the base or garnish... Which were not in case of my grandparents... Who hailed from dhaka... Mam... Im a student.. I may not have visited dhaka..... And I may be less experienced than you... But I certainly notice a huge difference in their way of cooking as compared to ours... As you mentioned.. You have visited dhaka a no. Of times... But madam that doesn't change the fact... That it is a Muslim dominated area... So the use of onion garlic ginger is dominant there which was not the scenario in undivided India..... Thank you🙏

East Bengal is a very diverse place ,please don't generalise all the people who migrated from East Pakistan as Bangal,every district has different way of cooking ,the cooking process of Sylhet (my native) is way different from Barishal ,Jessore or Noakhali

The thing which makes Bengali cuisine both Indian & Bangladeshi so rich is the influence of so many other cuisines in it. So, though it cannot be called the purest of cuisines yet it is unique on its own.

Absolutely... The chef defined the food as predominantly something that belongs to the elite Zamindar class. Kolkata being the abode of the Zamindars only.. which again is a problematic statement given the fact that most of these spices come from places beyond the Kolkata metropolis. Most importantly, the chef demeaned east bengali food as something that lacks nuance and richness. Parochial regionalism and sectarian sentiments that typically see the bangals (east bengalis) as the "other" of the cultured class of Kolkata dwellers (the ghotis). The chef is skilled but lacks actually knowledge of true pan-bengali culture and history.. Shame..

The very first thing the chef should have learnt is how to eat a bengali thali. He is not eating a burger here for god sake. Its heartbreaking to see he did not do justice to the food served. Please bring someone who is really passionate about cultures before you make them sit to experience their cuisine.

East Bengal food cuisines are majority of varieties, which covers paturi in may ways,fish curry in many forms, and so unique vegetables has been used... OMG... I think East Bengal Hindu cuisines have unlimited rich food culture.... as Chef mentioned, it's not only just turmeric, and kalo jeera..... it's just treat to visit East bengal bari😊

East Bengal hindu food is very light. Think morichpora. I think u ppl are confusing the cuisine of East Bengal Muslims. Also in East Bengal the Sylhetis , Bramhanbaria, and Comilla use onion . Others do not. My pishi used to tell us how her mom in law almost fainted when she put a little onion in tel koi.

Cooking techniques are of a particular interest of mine. Do u know Hindus never used garlic or cooked chicken for a long long time? Hence the red steamer chicken curries made again by the Muslim cooks . So learn to value history . If your knowledge of Bengal's Muslim cuisine is restricted to their eating beef only then I do get your limited knowledge on this. Are you aware that we cook 'boli r patha' with ginger and garam masala only? As for your intensely secular sensibility my own Mashi is married to a Muslim as is my paternal cousin to a man named Joseph Sheikh . Actually East Bengal's cuisine is full of richness and taste, and also Spices... Many dishes which is famous now a days at West Bengal are inspired from East Bengal's cuisine.. This is really so sad that this chef from a renowned restaurant have lack of knowledge actually...

There is nothing called a Bengali thali nor was there ever was. Bengali cuisine is a different course meal and comes in courses starting with bitter and ending with sweet. Ghee is served in the begining.

The difference between west and east bengali food was not correct. And if a bengali thali does exist, these days it should have elements of both. And as he rightly says, every house has its own thali, and so if one has to generalise maybe a dal, bhaja and maacher jhol needed to be there. Tbf, he did say that this wasnt the most typical one. Anyway 👏.
