Spicy Tuna Poke Nachos is one of my top 5 meals when I visit my favorite place, Hawaii, and allergies are killing me, I'm stressed out and I need a vacation and I can’t swing an 11 hour flight right now so instead, I’m making my version which is a lot easier then flying to Hawaii and with my additions maybe a bit better

If fish is labeled as "Sushi Grade" , it usually means that the fish has been frozen at a certain temperature for a particular period of time that ensures any parasites have been killed.

In America at least, there is zero official regulation for what is or what can be called sushi grade. It's a marketing label and nothing but that.

@@RubbleD -35 degrees, typically flash frozen to kill off any parasites. That's what it means--and the fish is fresh. In some markets it happens on the boat when it's caught.

@RubbleD though the label " sushi grade" isn't regulated, suppliers and stores open themselves up to litigation if someone becomes sick. That is why companies generally won't use it unless it's been previously frozen

Nice tip about checking the sauce thickness on a cool plate. I’ve been hit and miss trying to judge the sauce while cooking.

I make Hawaiian poke frequently and I've had maui onion and it is a very sweet onion - you can get away with using Vidalia from the southeast US, which is slightly better in flavour and texture than than Peruvian sweet onions - but always go for a sweet onion. The proper seaweed is ogo - I keep furikake around for onigiri and other things but it's nothing like ogo. For the spicy sauce, in addition to kewpie mayo (the imported Japanese one has msg and the American one does not - it's also very easy to make), there is something called "kimchee base" by Momoya (not the Korean kimchi fermented cabbage) - it is a chili sauce that contains essence of smoked slipjack tuna - aka bonito - if you don't want to use bonito but want that smoky umami and extra heat. I keep bonito for dashi but kimchee is spicy, acidic, and has intense umami because of the bonito essence - Sriracha, kimchee, Japanese kewpie, and a dash of sesame oil make the usual spicy sauce for spicy tuna sushi. Sriracha has been back but, recently, because of a drought, leading to bad pepper harvest, it is scarce again - which is unlike the previous shortage caused by a dispute with the original pepper distributor. Seriously, snag it if you see it - I make pho a lot and got a tip to get some before the last shortage, thankfully since the same size bottles I for for $7 were selling for $40 each on ebay. (No, I did not sell them! Scalpers are a pox upon earth from actual food to video games) I've done poke nachos before but didn't do fried wontons - very clever indeed. I usually with a thickened ponzu instead since teriyaki has always been waaaaay too sweet for me. I may try to do a tuna takaki - poke style nacho with thickened ponzu and spicy sauce next time. (Irrelevant fact: If you see my red hair in my thumb-nail and roll your eyes - my grandmother is Okinawan + Lakota and the red hair randomly comes from the Japanese side of my family - my cousins and I call ourselves "ginger-nese" and my grandfather is Greek + Italian - we are um ... MediterrAsians?)

Coming back to this video because my spouse and I have made this twice and it's absolutely banging. So damn good. We didn't have finger chilis, but we added pickled jalapeños and the vinegar really brought a lot to the party. They're a must for us. We also had some crab sticks on hand so we added a bit of crab salad with kewpie and Sriracha and that also rocked. Kickass recipe, Stephen!

Aloha. Lived in Hawaii almost twenty years on and off. Usually the off were summers in Alaska. Never had poke nachos. It was always just poke, many different kinds , sometimes with rice, sometimes not. My favorite was the kimchi black crab.

One easy switch would be to use Thai Healthy Boy sweet soy sauce and some rice vinegar or mirin. As for the rest, just a thin soy sauce, maybe some gochujang and something other than sriracha for the mixes. I like it though, and would dig in to your confection. I just like to combine what I have to get a similar flavor profile. I don't worry that much about looks, but the fact that you got everything on those chips is a good suggestion that this is a keeper, rather than a sloppy mess.

I think you need acid for the dish, the sriracha is the only ingredient (with the kewpie but that's a stretch) that will bring acidity to the nachos.

Has anyone tried adding a bit of rice vinegar to their teriyaki? I like to add tart to my Asian dishes more often than not. I think it might diffuse the sugar a bit and be a nice touch. Any input?

I do the same, but mirin is quite difficult to get my hands on where I live, so i'm stuck with one that I believe is even sweeter than the usual stuff. I do love some tartness in the teriyaki though, I don't like the overly sweet sauces.

Siracha stinks now, tastes different because they are using a different farm to grow the chiles. The old farm makes their own siracha now - Underwood Farms. It's pretty good.

The indigenous people of Hawai'i have been speaking for years about the suffering that the tourism industry in Hawai'i has brought to the island, which has been especially destructive since the Lāhainā fires of 2023--nearby hotels that had been housing displaced victims of the fires have recently been pushing them out in favor of lodging paying tourists. Meanwhile, many indigenous people of the very same land continue to be homeless due to limited government response to the tragedy. It is deeply irresponsible and damaging to participate in the ongoing disruption of Hawaiian people's lives by traveling to Hawai'i as a tourist.

@@adamyoung480Indigenous Hawaiians don't actually see most of that money, and as I stated above regarding the 2023 fires in Maui, tourism is a higher priority to the government than people's lives, and hundreds are left still homeless to this day in order to accommodate more tourists
