I grew up with lobster rolls both ways but they always included paprika. When I lived in upstate NY there was a place that made a warm buttered lobster roll on a toasted English muffin open faced that was out of this world. They are all good, I don't think any are better than the other it just comes down to what you are craving.

The more ingredients you add, the more it detracts from the taste of the lobster. Warm lobster and butter in a toasted bun. The fact that Red's in Maine doesn't warm their lobster is the only reason why theirs isn't the best.

Its kind of the same way I like crab or shrimp. Like like steamed crab in hot garlic butter or shrimp scampi, but I also like crab salad which is made with mayo or shrimp cocktail which is made with ketchup.

Whole lobster with melted butter. Lobster rolls, well that melted butter just soaks the bread and makes a mess so mayo is best. Rhode Island born so like most New Englanders, we have strong opinions. Don't get us started on clam chowder

This is a great video to show The Best of Both Worlds. But... living in New Hampshire we'll take mayonnaise over butter any day.
