Made this tonight. Hubby said it’s the best soup he ever had. I used some of your Zesty seasoning blend, half a cabbage and didn’t bother with the cashews. Used white potatoes and didn’t peel them. Yummy!

Oh, so yummy. I did not have fennel, so I used the seeds instead and added some chopped up turnip and parsnip, along with the other ingredients you recommend. I even make my own bouillon powder and it keeps for a month in the fridge. Just a tablespoonful of that and before I couls say abracadabra, I had already entered the magical wonderland of delectable flavors and satisfaction.

I make a similar soup in the Instant pot...only instead of the fennel, (not terribly fond of it and besides, Aldis never has it and the other stores are way too $$$$) I toss in a can of rinsed sauerkraut, some caraway and mustard seeds, and a cup or so of thicker pasta that holds up well, like ziti, rotini, penne, cavatelli, etc.. When it's done five minutes later I stir in some homemade soy or oat yogurt when serving, and garnish with some nooch and parsley. Yum. Yours has a kinda Irish vibe, mine more Slavic. Cabbage gets a bad rap but it's one of my favorite veggies!

@@loeserlegal Ages ago my Polish Grammy would make pierogis from scratch with all kinds of different fillings, and I loved the cabbage and sauerkraut the most. Now at her age, since I'm highly unlikely to make them for myself (quite a project for 1 person with a tiny kitchen), this is my cheater "pierogi stew/soup" I guess!

Is it common in Slavic cuisine to use cabbage and sauerkraut together? In your soup, do the mustard and caraway seeds get soft when you eat it or do they stay hard?

@@lizzzarduh It seems to be, and my grammy sure did! And yes, the mustard and caraway seeds soften some after cooking and I think are barely noticeable, but add a lot of great flavor. I add about a TBS of each, but that's just me!

My store did not have fennel, and I was disappointed. Until I remembered your soup formulator! So I bought leeks instead, and for the spices I used bay leaf, thyme, rosemary and margoram. Oh my gosh, it is so good! And I love having the cabbage in there, not just potatoes! It tastes even better today. I'll keep my eye out for fennel and try that sometime too. Thanks!! P.S. I left the potato skins on!

Just made this but did an Indian (kind of) twist, used a bag of shredded hash browns, removed fennel and celery and added baby limas, blackened corn, spring onions, and diced tomatoes, instead of cashews which I didn’t have, i used tahini, and for spices i used cumin, chili pepper, garam masala, grnd coriander, curry powder, red pepper flakes, ground ginger and cardamom, celery “salt,” turmeric, and coconut aminos, and it was the best soup i ever had..i hope to try your fennel and spices next, thank you!!👍🏻

This soup is to die for and so straightforward and easy to make! I ended up making a couple of tweaks for convenience. For the veggie stock, we make our own veggie stock powder (we can't seem to find SOS free stock where we are so we have a spice blend that we add to the water in the pot - it works great); I used straight soy milk and didn't bother with the cashews at the end (still worked beautifully); and for the 2 tbl of stardust, I used the "sprinkle" spice mix from the Chris Beat Cancer cookbook that the author uses to flavor all kinds of things. I served the bowls with sliced avocado on top. The dish was an absolute hit. Thank you SO much!!

I thicken creamy soups by blending some silken tofu thinned with a bit of water until it has a creamy texture. Cheap way to thicken creamy soups.

I've made this soup using dehydrated potato flakes in a pinch and you can make it thick or soupy as you want. I've also used soy milk and less veggie stock - YUM!

Making the soup now. Smells soooo good. Just a heads up Dillon. When clicking on the recipe the list of ingredients lists the bay leafs but the step by step instructions didn’t say when to add them. No biggie as I improvised. What I have learned from you and what has been my biggest lesson is to modify if needed. If you don’t have something don’t fret. It has saved my over analytical mind ! Made it yesterday. My wife and I both loved it. Our local store was out of Fennel so made it without, but still great. I did increase the amount of Nooch. Can't wait to try it again with the fennel.

You know what I use for veggie stock? Dehydrated mixed vegetables, powdered in my steel coffee grinder, about one tablespoon of the powder per quart of water. It's WAAAAAY cheaper than buying ready-made stock!

I made a smaller version of this and tweaked a few things. It was amazing! I blended about a third with the cashews with some Thai basil. Thai basil and fennel have a similar flavour profile.

You brought back pre vegan life with Colcanon. The soup idea is great. Is it possible to do version 2? Where the base is mash or chunky potatoes..so a more casserole consistency. My version had bacon ,onion fried then folded into the potatoes and steamed cabbage with grated cheese. So I'm wondering how we can get the flavour and texture vegan style? Great show....thanks

Please don't peel your potatoes! I once had a summer job on a potato breeding station, working with the UK's gene pool of primitive Andean potatoes. The team there were world-renowned experts. According to them, most of the nutrition is just under the skin and is lost with peeling. They dedicate their lives to making our potatoes nutritious, and then people literally throw all that good food away. They would get quite emotional about it...

My "why" is overall improvement of health, frugality and it just feels right for the animals and the planet. I am trying to heal from fibromyalgia and chronic fatigue as well as to lose weight. I have a low amount of food money per month to feed myself and my teen daughter and I want to have the highest quality food we can afford. My food bucks go a lot further buying beans, legumes, fruits and veggies then it would trying to buy meat, milk, eggs and processed food. I manage to feed us both very helpful for less than $300 USD per month. But the overriding reason is I am 54 years old and I can't handle the pain that comes from fibro and the tiredness. I am really hoping that eating this way will allow me to lose weight and regain my health.

I made this today with my instant pot. I sautéed veggies using sauté mode for about 7 minutes and added everything except cabbage and set for 5 minutes. After 10 minute natural release, I added cabbage and set for 0 minutes and let it stay in warm mode until we were ready to eat! So yum!!
