I too was born and raised in Kokomo. Louie's is 100% the one and only place to get a bake. I've never heard it called a "Kokomo Bake", It's just a bake. My order was always 2 bakes and a coney when I stopped in. I recall having the recipe in a cook book that I bought in Kokomo that was sold as a fundraiser for a local charity called "We Care". I'll have to look around to see if I still have it. What I can tell you Greg is that the bakes I saw Louie and his family make were baked fully submerged in a sauce in a deep pan. The bake was plated by forking one out of the pan and onto a hotdog bun and then covered with mustard and I think coney sauce. They were not burned and they did not have the color of your bakes. I need to get back home to get one. Try calling Louie's and just asking them how to make them? They just might tell you. I'll let you know if I find that recipe! You brought back good memories.

Honestly if you haven’t been there and tried them yourself it’s very hard to explain or re-create. It’s definitely supposed to be covered in Louie’s coney sauce with mustard and onion on the bun. More importantly they submerge them in the coney sauce while cooking. I commend your effort but…..I hope you get a chance to try them from the restaurant and I hope someone can make a video showing them in store while being served.

I to same born and raised until I turned 19 moved to walton, best decision I've ever made! ❤I'm now 41 and still feel like a 6 year old sitting in a booth at their old location while having a glass bottle of Coke watching them make the bakes. And you always have to finish it off with another icon mores pie 🥧

In grew up in kokomo, I remember going to Louies with my dad in downtown kokomo in the late 60's, I always got the Coneys, [the hotdog]. The bakes were a little mushy for me. They where baked in the sauce, google Louie's coney island bakes and you can see the sauce. My friend was just in kokomo and that was one of first things he ate. Yours are to dry

Hi Greg! I appreciate all of your videos. As a hotdogger even moreso than a hamburgerer or meatloafer I was mildly surprised in my enjoyment of your instructional recipe for Kokomo Bakes. Two suggestions for your growing fanbase regarding the recipe: 1) If persons can’t smoke the meat, add the appropriate amount of Liquid Smoke. 2) For additional flavor, a person can add an appropriate amount of soy sauce compensating with less salt. Also more akin for hotdogs, a person can add garlic powder (or any other ingredients for preferred flavors) into the meat mix. This is applicable for the drizzle as well. Louie's in Kokomo is the best. These Bakes are great. The one thing I see different, is they actually have them soaking in a pot of some type of mixture, which I have begged them to disclose. May be a Coney stand, but one of the best places to eat in the area.

You have so many options with this. As you mentioned you can go with a marinara sauce or more of a Mexican style with salsa, or a chili sauce. And nothing wrong with basic American stile with onion, mustard and pickles. Thanks for another great video.

I live in Indianapolis, which is just south of Kokomo and have never heard of Louis. I’ll be heading there this weekend. If you want to know the history, just google the place and you’ll find lots of pics that have the history. The food looks great.

The coney sauce was Hormel Beanless chili with meat. I noticed when I got the they were kept warm in the chili sauce. Louie was a big man and at some point he passed and a nephew (I think) took over and moved the restaurant from its down town location on Superior street in an old building that has since been torn down for a parking lot. They moved the restaurant to 1700 E Hoffer Street. It’s on Yelp and you can see what a bake looks like finished.

When I think of Kokomo, I'm thinking of the Beach Boys song with that title. That has more of a meatloaf vibe to me, because of what went into it. It also has kind of a kebab look to it. A very interesting cook. Cheers, Greg! 👍🏻👍🏻✌️

I lived in Kokomo for about 5 years... I remember the cooked bakes sitting out on an open platform (flat top grill?) covered in piles of onions and some kind of sauce while they were waiting to be bought. The product served is very wet compared to yours. They are super hard to explain! Not much color on them, they are more steamed, kind of like a White Castle.
