Love your vids. My injection is a bit more complex. I use melted butter, lemon juice, white wine mixed with fresh garlic, thyme and other fresh herbs. I sauteed the herbs lightly in butter then add the lemon juice and wine and simmer. That gets put in the fridge for a week. I heat it up and strain out the solids . I inject the remaining liquid. Frying a turkey is so much faster and better than baking one. Been doing it for 35 years. Cheers from Shreveport. North bayou. Damn near a Yankee!

We are on the same page here my friend. This year I smoked my bird for 2 hours then deep fried it. It was amazing. Bird was at 125 degrees when it came off the smoker and took about 20 min in the fryer to get the breast to 165.
