Louisiana Wild Hogs (Catch*Clean*Cook) Making 100 Pounds of Homemade Boudin (a cajun delicacy)

In this video, I show catching five pigs and some of the cleaning process. I then processed 100 pounds of Boudin (a cajun delicacy) and vacuum sealed for the freezer. Finally, I complete the video by cooking some on the pit and enjoying with family and friends. After many years of cooking and seasoning my catch , I have perfected my own cajun blend and happy to release it in this video.

Well I'm not sure how I missed this video, but I went to your channel page looking to see if you had anything new up and here it was! Man oh man, boudin makin from the squeal to the grill! Great video Ken! I need to do up another batch of boudin myself. Hey, what kind of stuffer are you using? I'm looking for one about that size, and I could see how easy it presses the meat out. Nice!

Thanks Rus! I like that squeal to the grill! 🤣Would be a great title .I think my stuffer is a American Sausage Stuffer. I will verify that for you! Thank you so much for your help , it really means a lot. Hope to return the favor soon.Y’all please check out this guys channel. He’s a unbelievable cook and BBQ Pit Master!

Wonderful ! I do Not have the pleasure of living in Louisiana but I live next door in Texas. When "Popeyes" chicken first came to Texas I was just a kid (we were very excited). I got my 1st taste of Boudin and have been obsessed with it ever since. What I most enjoy about your videos is your mellow low key approach to what you do. 100% genuine, no Nonesense.

That was the best 23 minutes I've spent in a long time. I love the way you make videos. All the way from throwing the corn on the ground to eating the boudin. It looked great. Sure wish I was kin to you or maybe a neighbor or something. No way your family can eat all that boudin in two years. The way your buddies were grinning, I think they figured on taking some home too.

You sure are right brother it is alot of work. I usually make 150lbs of German sausage, 150lbs of jalapeño cheese sausage, 50 lbs of sweet Chipotle sausage. 20lbs of summer sausage 50 lbs of breakfast sausage mild. 50 lbs of spicey breakfast sausage. 30 lbs of pork bacon. 30lbs of jerky and if I have any meat and energy left I make about 10 dozen tamales Directly after deer season. Make and stuff sausage for 4 days streight and smoke sausage for 5 days and it takes a good two full days to vacuum seal it all. Then need a week of rest But man it sure is worth it. That looked spot on. I may have to try to make a batch this yr. Keep up all the good ideas brother and stay safe.
