Ok, made this today for my sister’s birthday. The party was so chaotic that the dip never made it to the appetizer table but ended up on the dinner table and it was getting more “press” ‘ than the main dish!

Looks delicious and if you cut down the amount of onions, and perhaps the garlic it will certainly be keto friendly. With pig skins, of course or maybe on cauliflower.

@@theraVen27 you can boil them for a veggie stock. cover with about 1" water. add some aromatics like bay leaves, rosemary, thyme, etc then simmer for 20-30 min. strain. cook down ( i go for about half of what i started with.) this makes a great veggie stock. you can also hrow in any "extra bits & pieces" of leftover veggies you may have laying in your fridge that you don't really know what to do with or do this to them in genreal. when ever i have lefovers, i rough cut them, throw them in a baggie and freeze them. when i have enough i make a large batch of some veggie stock to make veggie soup. I then freeze that for a quick winter meal when i don't want to cook or a quick side dish for when we have unexpected guests. also throw them in pots of any chicke or beef stock i'm making. but i usually wrap them in a little bag of cheese cloth for easy removal. i do this bc when making he stock with meat there is usually some meat left on the bones there is usually some meat left n the bones and i want that for the gravy or soups that i will make with it.

Just use frozen spinach, it’s easier and everything cooks in one pan. No need for onions either. If you must, using shallots is a better choice for a dip.
