Something that really helped me when my son was young and i was a working single mother was to find an hour or so at the beginning of the week and prep ingredients...not MEAL prep but INGREDIENTS. Having veggies chopped and stored, meats seasoned and packaged by individual meals...even precooking something like hamburger that i know I'll use once or twice in the coming week and seperating it and freezing really helped. Until you try it, you don't realize how much time you save and how much easier it is to get food on the table! It's something I still do!

Paula, Paula, PAULA! I had something today at a street festival called Midsommerfest in Andersonville, Chicago, IL - that'd make you wanna slap ya' mama away from the table! A donut made from POTATO! Yes, POTATO! From a place called Downstate Donuts - they're a few blocks south in Uptown. If you have anything similar down by you, I highly recommend giving it a try! Absolutely blew my mind! Here's the thing that's wrong with the world today. Food wise I was a very picky young man. If your child refuses to eat an ingredient that you know is good for them, then you do NOT substitute. You make the meal and if they don't eat it, then they don't eat. That's what my parents did. Then they would throw the food away in front of me while reminding me that people who weren't as fortunate as I was, were starving. Brothers and sisters let me tell you, that worked! As an adult I eat all nutritious foods and I make certain that I never throw food away. In most cases children do not need to be coddled, children need to taught so that they learn.

I think I was a strange baby because I loved and still love veggies. I LOVE salads and I LOVE vinegar so much my mom told me when I was just starting to talk, I'd ask for "a lettuce with bingur (baby talk for vinegar)" I'm assuming my mom most likely ate salads and gave me bites.
