For those of y'all have been to one of my Paula Deen's Family Kitchens, what is your must-order dish?

We dined at Lady and Sons in Savannah for the first time last week. To be honest, after our meal, we could not pick a favorite dish due to the fact that everything was simply that good!! We had the fried chicken (best ever) and pot roast, creamed potatoes, creamed corn, green beans and salad. We truly discussed selection of a favorite dish, but everything was so good that we could not call it; it was an excellent meal in all regards!!! (and your staff is so lovely).

Mrs. Paula, I can't thank you enough for this recipe! I'm a good cook, but no matter what I have tried, every time I have tried pork chops, they turn out tough and dry. I've watched you since the year 2000, so I don't know why I didn't think to run straight to you and see if you had a good solution for this! Either way, I'm so glad I found this last night. Usually, if I'm making pork chops, I just go ahead and do baked pork chops and rice, because at least they don't turn out as dry, but there is nothing in this world that will substitute when you are craving fried pork chops. I had set out chops, planning to just bake them as usual, but I thought, "I'm gonna fry those dadgum chops, and finally get it right, even if it kills me!" The buttermilk was the main thing. I completely agree with you that it helps tenderize the meat. I let my chops sit in it for a couple hours before I fried them, turning them occasionally, and it was fantastic. Your video also allowed me the opportunity to learn that I was not letting my oil get hot enough before adding my chops. I had always turned it on and let it heat up, and I thought it was hot enough, because when I put my chops in, they would start to bubble a little around the edges, but nothing like the instant sizzle that you got. And if you put them in before your oil is hot enough, that means they are going to have to cook longer before they are done, which is going to result in a tough, dry chop. This is also the first time I used a meat thermometer to check them before I took them out of the oil. I've always just judged their doneness on the color before, and they were either still raw near the bone, or most of the time, they were overdone and dry. My mother is from the same generation as you, so she has preached to me about cooking the snot out of pork my whole life, and you aren't kidding that old habits die hard! 😂 There was no pink left in these, and yet they were juicy and tender. I made gravy (just in case), but they truly didn't even need it. Thank you so, so much! I will never fry pork chops any other way! You're just the best! This Christmas season, I thank Jesus for what a gift you are to the world, and I hope you and Michael and your family have a blessed, joyful holiday! ❤️

Well, unfortunately the one in San Antonio, Texas closed. I moved back to SA in 2016 after the passing of my mother. My sister told me about Paula’s restaurant and with moving and forgetting I heard the restaurant was closed. I will add that this is one of my favorite ways to coat a pork chop! Love the celery seed. I live in Savannah and I would serve her son, Bobby, in the restaurant that I was employed by at the time, roughly around the year 2000. He was a very kind and most generous young man. He would even request me when he entered the establishment. I've been tempted to apply for a serving position in the downtown Savannah area. I could see myself really enjoying myself working in that friendly atmosphere. Bobby, if you read this, I used to work at Shoneys Restaurant on Abercorn about 20 years ago. You are awesome! Your mom did right by you and your brother, obviously and she deserves continued success in her life. Your tamily is warm and embracing. Much more success to all of you. God Bless.

I love pork chops. I make mine the same way except I dont use celery salt. That little bit of cayenne makes a world of difference. I want to go to one of the Family Kitchens so bad. Hopefully I will make it there one day. Yall have a lovely day!

Just an FYI...If you dredge your porkchops 🥩 in the flour first then a egg mixture then back into your seasoned flour with cornstarch added into the seasoned flour...your porkchops 🥩 or any meat your frying will turn out super crunchy and crispy. Really delicious 😋

Been a BIG FAN for years . NOTHING has EVER CHANGED THAT ! Your recipes are fantastic and I love the Rapport you have with your sons we also have three sons although we did lose one of our precious boys in 2013. Taught my boys to cook , from the time they were old enough to get the concept , they had one night each week , they were " in charge of dinner " ! From shopping for ingredients to mixing spices . Also Once a month they had to choose an " ethnic dish " from what ever country they chose . On those nights they had to give information on the country of " origin " for menu choice ! BTW , Love me a bone to gnaw on too !!! ❤

So happy I found your channel, and to be honest - I like this much better. Paula, I love your videos, and I've always been in love with your lovely southern accent, it's almost like a lullaby to me. I lived a total of 15 years in the South. I lived in Birmingham for a little less than five years, and the rest of that time was in Memphis, TN. One thing I adored about the South was their HOSPITALITY! I would go to the home a friend, and his mother would start setting the table. I would protest and then my friends would enlighten me that this is/was the way it's done. Don't decline the food or you will upset them terribly. Apparently, declining food from a host is a terrible insult, and almost quite unforgivable. I adore the South, a place that hasn't lost their traditions. You took your hat off when you came in a home, you always said "Sir" or "Mam" when speaking to your elders. They always took their hat off when a funeral hearse drove by. What sweet memories, and to this day in St. Louis, I do whatever etiquette demands. God I miss the South, and you bring it all back to my life again! 💋💋💋 PS, You make me homesick for the South!!

Good morning! I’ve said it before and I’ll say it again, you remind me so much of my mother. She loved to naw on the bones!! Pork chops were probably her favorite but any steak bone would do. I made these pork chops exactly as demonstrated by Paula Deen in this video ... and they were delicious! Having a quick-read digital thermometer is key. I did get a little heavy handed with the cayenne but they were still good.

Paula, there is no need to pound/tenderize your chops. Instead use Lime Juice on both sides, just rub it into each chop, let it rest to room temperature and then add your seasonings before frying, baking, roasting them. The Lime Juice is all the tenderizer you need. Lime juice is also great on all types of steaks for tenderizing as well. It works well without any pounding to the meats. Enjoy! (Also there is no flavor of the lime juice on the meats when eating them. You can't tell Lime Juice was used for tenderizer)

I have your wooden seasoning bowl I bought when we were at Paulas restaurant in Branson MO. Loved your fried chicken. I would have ordered your chops if I had seen this video. Delicious !!!!!!!
