In defense of Tiffany, these shooting days are rough. There was a lawsuit summer of last year about harsh filming conditions. Sure the living spaces look nice, but cast members have said that they have to sleep in cramped trailers and have really long shooting days. You can see evidence of this by all the clips of cast members sleeping on couches and talking about naps. Plus, as others here have said, they seem to constantly be consuming alcohol. They clearly are all exhausted, which is exactly what Netflix wants. It's a breeding ground for catching fast feelings. I think Brett accepted her apology because once he knew she fell asleep, not walked out on him, he probably understood.

In Tiffany’s defense… when you really like someone it becomes easier to fall asleep with them. There is science behind it. Something about feeling safe. Plus they have these wall dates for like 10 hours at a time.

She also seemed drunk when she woke up, so I personally think she passed out from that. Netflix is known for having the alcohol excessively flowing on this show. I went speed dating once and THAT was really tiring so I do believe that going on those dates all day long has to be exhausting.
