To much sugar in store bought catsup. I make my own, but thank you for taking it up a notch. I did make it and added chipotle with the adobo sauce and it's delicious.

Here in the UK there is an ongoing friendly rivalry between Tomato Ketchup fans and something we have called Brown Sauce fans. (Its a dark slightly spicy sauce. Im not sure if you have an equivalent in the states. If you havent tried it Mike, I recommend it) Im on the fence. I prefer ketchup on sausages and brown sauce on a good bacon sandwich but you havent steered me wrong so far so I'll definately be trying this. Its an easy recipe with a tasty result so why not have a go. Great video as always mate. Thanks.

I refrigerate immediately. It will last a good month or so, maybe longer. Just keep an eye on it. You can use more vinegar as a preservative to keep longer. You can also freeze it. Enjoy!

PS I do add a bit of ketchup in my homemade Mayonnaise for use in prawn cocktails or as a dip for deep-fried calamari.

This recipe looks amazing, especially for when the garden is full of tomatoes. For canning, do you by chance know how long to water bath this recipe? I'd love to can some to have year round.

I have not tried to water bath this, though you can up the acidity if needed. 10-20 minutes in the water bath is typically sufficient, depending on elevation.

This is a 2 part comment. I am not the ketchup fan I was when I was much younger. We must have gone through a lot of ketchup in a household of 12. Mom had saved the empty bottles and washed them thoroughly with a bottle brush. They were glass bottles then so probably better for reusing then the plastic bottles now so common. Then she started to buy Ketchup in #10 size cans. As kids our task was to fill the bottles. If we refused to help bottle, it was no ketchup for you then. . As I got older, ketchup became less important to me. Now, a 20 oz bottle can last me a year in a household of 1. On a lucky day 2. Now days, I've gotten interested in making sauces, relishes, etc. I saw a video on a NY Style Onion Sauce that sounded interesting to me. It involves caramelizing onions, adding seasonings, this, that, and the other thing. I looked at the recipe and realized "the other thing" were the ingredients for ketchup. I just decided to use Ketchup from the fridge which has the same ingredients as "the other thing". It simplified this recipe for a NY Style Onion Sauce. Imagine my surprise when I see a video from Chili Pepper Madness how easy it can be to make homemade Ketchup flavored to personal preference. Takes some time, but is on the easy scale. And is hard to screw up. Thanks for this. Part 2. I saw a Culvers Story on how/why to make a very good burger. Imagine my surprise when I saw you were on the panel of 5. I was half expecting you to say darn good burger, but gotta get some ground up Serrano's or something mixed in with the meat. .

I grew some Everglades tomatoes this year. I didn’t get the harvest I wanted, so I would just pick and eat. I swear, these tomatoes come pre-seasoned for making ketchup. I can’t wait till next year and hopefully I’ll get a decent harvest.

Store homemade ketchup in sealed containers or bottles in the refrigerator, where it can last for 3-4 weeks or possibly longer. For longer storage, freeze it in freezer bags or containers, and it will remain good for up to 6 months.

You can skip it, or replace it with an artificial sweetener, which would work fine. I use Stevia in several recipes at home.

It's pretty smooth from the straining, though you can leave it thicker and chunkier if you'd like. I like mine a touch thicker, but you can add a bit more liquid to thin it out to preference. Yes, keep refrigerated. Enjoy!

How do you keep it from tasting like marinara sauce? I did a batch and it tastes a bit like ketchup due to the vinegar and brown sugar but not to my liking. What am I missing?
