I used to make homemade ketchup a lot because my sons went through so much of it. But, I haven't made any in a few years even though I keep thinking to make some. Will move it up my list and switch out the white sugar for brown and add the cinnamon (already use the pinch of cayenne). The first time my sons knew I made our ketchup, they fussed about it not being like "real store bought". They were like that about homemade potato chips, too. But, when I pointed out that just about everything you find in a store, from mayonnaise, to ketchup, to bread, to anything in a can and any kind of snack, literally everything in a store, was made by somebody at home first and someone came along who had the idea that other people might like to try it and that it might be a profitable product. Most of the homemade items are 100% tastier than their store bought knock-offs. (And to think, some folks call the homemade items the knock-offs. Nope, store bought is the copy.)

Agreed! And same goes for every.single.thing we own! I used to make my baby sling myself and people would just roll their eyes at me or imply I was going to kill my baby... this thing had been around for ages in Asia, Africa, South America long before western firms started making money out of it...

You should be teaching your kids that whatever they sell in the store is a cheaper lower quality version with loads of preservatives and overload on cheap instead of quality ingredients, for the masses and that if they prefer eating cheap crap you will gladly buy it for them instead of investing time and love into making higher grade food.

A couple of years ago my niece gave me a bottle of Portland Organic ketchup, she (an adult herself) says to me "this will change your life".....she was right! Ketchup can be soooo different then what we have eaten all these years! I live far enough away from making Portland ketchup an easy purchase so it's time to make my own, thank you for this video!

This looks like a fabulous recipe. Being able to keep it frozen until needed is fantastic. I used to make my own when my kids were growing up and I made homemade burgers. I didn't put sugar in it - the caremalised onion was the sweetness. I used herbs too, fresh and dried, with oregano, a little rosemary and basil. I've never had a taste for commercial ketchup, but as a vegan you always have visitors who are used to the dominant brands, so wonderful to be able to pull some out of the freezer when needed. .

Right?! Haha imagine spending all the money on these ingredients and time making it, only for it to go bad in a few days or a week. Lol. This is too much of a pain imo anyways. Edit: Just got to the end of the video and she said it lasts 10-15 days in the fridge and freeze the rest that you aren’t using right away (take out as needed).

Use the same jar, close it. Fill a pot with water, submerge the jar in it, lid side up. Bring it to a boil on medium low heat and let it simmer for half an hour. Remove the jar and let it cool down. Should keep for at least six month without the need to refrigerate.

@@anti-ethniccleansing465 Same as caned food. I do it all the time with fruits, veggies, stock and so on. Half an hour if you do it right after cooking it. So out of the pot into the (sterilized and warm) jar. The rubber seal must be sterilized as well (cook it for a couple of minutes in water with some vinegar addded).

I’ve used all types of tomatoes for my ketchup. Cherry, Roma, whatever I grow at that time. I also use the whole tomato except for the stems. Seeds are fine

The tomatoes you've used look like passata. I haven't seen the tomato puree you chose in cans here in Germany. So can I assume, passata works just aswell?

As a retired bus driver, l practically lived off ketchup. It's frustrating when restaurants only give you packs when in reality each meal needs a full bottle.

You can definitely make ketchup from tomatoes, it just requires an extra step, making what the italians call passata. From there you keep it on low heat and condense. The market leader on ketchup has its European operations set up in Spain. They grow their own tomatoes and process it all the same way, from whole canned tomatoes to concentrate. Ketchup is the strained and flavoured version.

Have you ever done a tomato butter recipe? Obviously that is very different recipe from ketchup. My Mom's tomato butter (& apple butter) came to mind watching you. I would love to see your take on these two recipes. 😋 I wish I could share my mother's recipes with you. (That is, once I find them in her pile of recipes...🤔). But I mention my sharing seriously. I firmly believe that sharing recipes are our gifts to others and to the future. Thank you for your home made ketchup recipe. I plan on making this recipe. @Anti - Ethnic if Cleansing - I first want to say that my mom's version does not use butter (although when I went to text some leads, there are many different recipes types) so I can only speak for my mother's recipe. Best of my memory, like her apple butter, her tomato butter was a cinnamon, similar spiced, not too sugared, tomatoes that were peeled, deseeded and then slow cooked down into a thick sauce jam. I, am in reply, looking really hard for mom's recipe. Our family would have tomato butter (& apple butter) on fresh made oatmeal bread. 🍞 Heavenly! 😋😍(or any bread, toasted, or whatever). Check other tomato recipes online to see other uses for any of these type of recipes. As I said, recipes need to be shared!

I'm allergic to members of the bell pepper family. Chilies are not a problem. Would you recommend leaving out the roasted peppers or substituting with carrot or another type of pepper?

I buy three gallons of catsup each month. About $6 per Gallon but if you get the two bottles that are together they are costing $10.

There are a lot of steps that can make that recipe quicker and easier. Tomato paste for example cuts about 90% off that cooking and straining time. The you cook and blend the rest of the ingredients and strain them after. Much quicker and easier to strain and 90% less cooking time. Then just mix or blend and cook 2 more minutes together. Come out the exact same way..

@@cathybrady2822 1 can of Black beans drained. 1 can of Kidney beans drained. 2 cups of Chickpea flour more or less. Put the beans in a high powered blender. Fry 1 large onion, 2 heads of Garlic. Add 1 tsp of garlic powder, onion powder, Turmeric, Old Bay seasoning, Chili powder and whatever else you like. Then add 1 can of Tomato paste and mix well with the onions. Add this mixture to the blender and blend with the beans until smooth. Pour into a bowl. The mixture shouldn't be too wet, nor too dry. Add the Chickpea flour and mix well with the bean mixture. Form into patties and fry in olive oil on each side for 1 - 2 minutes. Thats my recipe for veggies burgers. Let me know if you like them. ❤

Balance between acidity and sugar! The formula to remember when creating the ketchup... So far in my life there were Heinz ketchups, and no ketchups at all. I wonder what my feelings would be after I conduct the degustation of Your ketchup, Jana... Most likely Heinz would cease to hold the palm of the championing winners... Most likely. 🍅

That’s not ketchup it’s tomato sauce. It would ruin my burger and fries. Homemade ketchup is a waste of time and effort. Heinz is a perfect ketchup, with a flavor and texture that cannot be improved upon. It’s what ketchup should always taste like.
