I work in an area with 15 overhead fans and 7 fans in an ice case for a seafood/meat market department at a supermarket. What bothers me are the customers who are so quiet I cannot clearly hear their order. These problems get compounded when water, soap, or sanitizer is running. In my view ''What did you say' is the worst. 'what', 'ya what' etc. are bad. 'what did you mean by', 'I didn't get what you mean', 'I didn't catch what you said', 'I'm not sure I understand what you mean by' etc. are not good. 'That went over my head', 'It's all Greek to me (a quotation from Shakespeare)', 'What are you on about', 'that was clear as mud' etc. are complicated and unclear. We should use the phrases/words/idioms that are short, easy, lucid and polite

"What did you say?" with a tipped head, polite frown and a soft voice is fine. "Excuse me," and "Sorry," makes people wonder what you're apologizing for. "Come again," is confusing and old fashioned.
