What about if I want to use 'would've been', 'could've been' or 'should've been' with another verb after them, e.g. 'I would have been speaking French', 'I could have been eating the dinner', 'I should have been working today', etc? Is the pattern still the same, and is the final verb in the infinitive form?

Bonjour, et merci! Not exactly. Would have spoken, Would have eaten, Would have worked = OUI. However, if you want to say Would have been, Could have been, Should have been you need to take care of "been" with the past participle of ÊTRE. In this case, your final verb will be in the infinitive form, but along with "en train de". For example, J'aurais été en train de manger, de parler, etc.
