If you mix a little of the egg whites in with the chocolate first, it loosens it up so that the rest of the whites will not deflate when you fold the rest of it into the chocolate. Doing it all at the same time almost guarantees deflation because of how seized up the chocolate becomes when adding the egg yolks, effectively resulting in a denser outcome on the baked cake or cupcake or bite.

you can melt the chocolate over a bowl of hot water. That way, you can control it too. I think i’ll add some walnuts or pecans in mine. Can’t wait!

if you heat your chocolate too fast and it hardens or "seizes up," you can add a teaspoon or 2 of shortening or coconut oil and stir it in well. It will soften your chocolate right back up.

If chocolate seizes up, I add a little boiling water and mix fast, and it will usually work itself back to a smooth consistency, but not if it’s burnt lol. I’ve only tried with regular chocolate chips though.

@@jamiewhite6593 It’s 1 cup chocolate and 1 cup or 16 tblsp Liquid Egg white. I half melt the chocolate then I whisk the eggs to form the peaks and then I finish melting the chocolate, then I fold the eggs through the chocolate. Then into the little mini muffin trays!

Such an interesting idea, I used to do something similar to make chocolate mousse. Melt the chips with a little boiling water in a blender, add the egg yolks and a tablespoon of rum, fold into stiff egg whites and refrigerate after putting into serving dishes.

I’m a chocolatetier. You melt the chocolate chips for 30 seconds intervals. If the chocolate is too thick after they melt you add a little bit of Crisco or shortening. Never add water, that will ruin your chocolate and of course you don’t want to burn the chocolate

@@cindyleastorch194 hi there - no I didn’t have any issues with the chocolate seizing. It was still warm, but not hot and I had already mixed the eggs prior to adding them to the chocolate. The chocolate broke up a bit but then came back together. If your chocolate overheated it will seize up. Try 15 second increments, stir, until you reach a minute if that much time is necessary. I still had a little bit of chocolate chunks when it was done, but worked out.

I finally tried this recipe and I was disappointed 😢 until I made a modification. I know it’s hard to find something that hits your sweet tooth and still taste great. This didn’t do that for me. The texture is almost like a quiche which I love . I used Lilly’s no added sugar milk chocolate chips. I thought the dark would be too dark and this ended up tasting real dark anyways. It was hard to enjoy almost as if I was eating a coffee choc cake. Like ground coffee. Lol so the next Batch I added some organic sweetener which was coconut palm sugar. Just enough to give it that sweetness and it was much better 😊

I prefer the taste of Choc Zero's chocolate chips over Lily's. You could also use their milk chocolate chips if you want a sweeter brownie.

This is basically the keto soufflé recipe I've used for years. If you fold in half of the whites and then the rest it will keep it fluffy. Then bake in a ramekin and you should get a soufflé.

@@amyclark9581 …..I have also used 1/2 Semi Sweet and 1/2 Milk Chocolate Chips in the 2 ingredient cake recipe, as well. Both from ChocZero. I cannot handle sugar alcohols, so ChocZero is perfect! It cuts back on the ‘bite’ that semi sweet chocolate can tend to have. On another note…..If you haven’t tried Mayra’s 2 ingredient spinach wrap, you NEED to search on that as well. It’s AH-MAZING! 😊

If you got the time, instead of stressing about over doing the chocolate. Fill your sink or a large bowl with hot water and place your chocolate bowl in the water, it'll melt without burning it.

But what I'm finding is that the next day, they are even better! More chocolatey. I put a heaping teaspoon of organic instant coffee granules in mine, and I think it was a bit too much. Instant coffee or espresso! Ohh yes! I am someone who can't go a day without something sweet and I'm always looking for a satisfying treat that is low calorie/carb/sugar. I generally can only pop a small piece of dark chocolate or two and it just isn't enough and then I end up overdoing it. Three or four of these little puppies will definitely do the trick without all the guilt! I also have a diabetic grandson and tracking his carbs and sugar is such a pain. He will LOVE these. Use a double boiler for melting chips. Bottom kettle with a little water, little bigger kettle on top of that with the chips. Put on med to low heat and stir intermitently.

May I offer: Melt your choc in a Bain Marie ( simmering water in a pan and choc in a separate bowl sunk in the water. ) No chance of burning. Fold with a metal spoon -you’ll keep more fluff. 🤗👍🏼

My mother showed me a way to do this to salvage chocolate chips as long as they are not overdone to where they're burnt and crispy if they're just dry kind of overdone then she said to get a kind of like 9 by 13 pan like a brownie pan or lasagna pan or something like that put some hot water in it sit the bowl in it and put two tablespoons of melted refined coconut oil and stir until they are salvage.

If your chocolate is seizing up it's usually because water got into it and it's actually water that will save it. Just add a little water and keep going until it turns back into the right consistency

Hi. You make all your recipes look so easy. You really create easy to follow recipes. When I click on that link for the chocolate chips, Choc Zero seems to only have chips in 20 lb bags now. It’s take us a long to go through that. The Lilly brand has 9 oz but it’s $31.99. Do you have other zero sugar chocolate chips..that are good? Also if we use a non stick type mini muffin pan would the cooking time and or temp change? Thank you
