I am diabetic and have high blood pressure. I started doing Atkins last year and it is the only diet that has not only helped me control my weight, blood sugar, and blood pressure, but has also resolved many of my other health issues: sleep apnea, IBS, fungal & yeast infections (tend to go with diabetes), nausea and many others. It really makes me angry that for decades doctors would scare me away from Atkins, but everything they told me was not true. I finally found a doctor who would believe me when I said that I wasn't cheating on the DASH/Diabetic/Mediterranean diets they had put me on and that they didn't work for me. He suggested Atkins and it has been like a miracle for me. Love this way of eating.

I don't know if anyone has suggested this but just watching you do the first recipe, I might consider scoring the dough (after it's rolled out), plopping the parchment paper right on the baking pan, and then break them after they're baked. Of course, unless it's for company, I don't care what something looks like, just that it tastes good. And that's exactly what you did with the second recipe. :D

I love your videos that compare recipes! Saves me so much time and money from having to 1) watch all the original videos, 2) try them all myself, 3) buy all the ingredients of ones that I probably won't keep making, and 4) we get a unbiased taste test! Thanks so much! Oh, and I do love seed crackers. I've been making the recipe by Heavenly Fan, which uses psyllium husk powder as a binder instead of the ground seed portion, and doesn't add flaxseed. And she adds oregano, which is good. Seeds are very healthy and filling, but I agree it's an individual preference.

do you mean lupin flour? I bought some but haven't tried making anything yet. I'm totally sick of coconut flour at this point since it needs so many eggs or some other binder and it's all extra calories. So gonna try almond flour + tapioca flour + lupin. Still haven't come up with a fluffy enough pizza crust so hoping the lupin is a keeper.

Wesley trust me two silicone mats you can see through them when they are clear or frosted White! Works really well even with the driest dough! another nice thing is you can run your hand along the top of the silicone mat and you can feel where the bumps are and you can make your dough perfectly level. You also can make it perfectly shaped because as you roll you can see where the dough is moving to... Your silicone mat with the blue edge that you're using is perfect. put your Dough in between two of those like what you are using to bake on right now and roll it out inbetween them. should it slide (which it probably won't) dampen the bottom of the bottom mat onto the counter! It won't move :-) then what I do is I just put the dough that is already on the mat that I cut with my pizza cutter and two squares or triangles and have docked with my pizza dough docker straight onto the pan to bake!no trying to remove anything when they are done baking they come right off of the mat. Usually after cutting with a pizza cutter you do not really have to separate them they will separate on their own. But if not they are still easier to move than when they are on parchment paper. I do know that you're trying to follow the recipe but in your own time try this! Any crackers that I make come out super crispy and with any recipe I can make under 15 minutes. I can pump out 7 batches in less than an hour. It's called meal prep Monday :-) For anybody looking for another really good crackerr tryout Suzanne Ryan's recipe and omit the egg! Those are the crackers I make they are super crunchy! I salt them generously with sea salt before I bake them ❤️

Great presentation. I would suggest replacing all the parchment paper with nonstick food grade silicone baking sheets. You can easily roll out the dough between two sheets, no sticking. Using a glass rim for cutting out the crackers will not damage the silicone mats. Very smart. Put the sheet with the outlined shapes onto the cookie sheet, THEN remove the scrap dough and roll it out on another silicone sheet. Repeat. No need to transfer individual circles of floppy dough. Silicone sheets are worth the investment. No clumsy parchment paper cost and waste. No messy clean up and stuck foods. It goes in the freezer, the oven, the microwave, and the dishwasher. My 20-year old SIlpat is ready to take on these recipes!

I just made the 3 Ingredient Almond crackers and OMG they are so tasty! I am surprised and so happy. I have several rare disorders and exhaustion is a huge component, I used to love baking and now most days can't even just make supper. Well this is going to be an easy treat that is so simple and delicious. Thank you so much for sharing this recipe!

I've made some like the seed crackers before and I liked them best of they where all chopped up. They to me are good for when you just want something crunchy that can travel in a lunch box. Will work with cheese though (like a creamy cheese spread)

I just started Vegan Keto and I Looove your videos! Thank you for including vegan options in your Keto cooking! Also, on the other non vegan recipes a lot of ingredients can be replaced with vegan ingredients anyway. Love how simple they are and how to the point you are! Great delivery! Thank you!

I’m with you on the seed cracker. I want to like flax (it’s healthy and helps a lot in low carb baking) but it just tastes bad. I tried to do so many things with it and it just makes everything I have used it in have a sort of “off-putting” taste! Great video THANKS!
