Made a batch of these today and they turned out like rock hard oatmeal cookies. Made a second batch and double checked the recipe just to make sure I did it just like the instructions. Same results. No rise at all. The batter was super wet before I was to add the water. If I had added the water it would have been soup instead of dough.

Taste, what about the taste? Also what about the texture compared to regular buns? When you cut them hand handled them they seemed hard like they would be crunchy if you bit into them. Next time take a bite. I did subscribe and hit the notification bell for all videos.

Sorry it took me so long to respond. Here is the macro info from the book I got the recipe from. NUTRITION INFORMATION 191 calories, 15 g fat, 1 g saturated fat, 9 g monounsaturated fat, 3 g polyunsaturated fat, 0 mg cholesterol, 9 g carbohydrate, 3 g NET carbs, 0 g sugar alcohols, 1 g sugar, 5 g fiber, 9 g protein, 279 mg potassium, 4 mg phosphorous, 648 mg sodium, 92 mg magnesium MACRONUTRIENT RATIO 73% FAT 20% PROTEIN 7% CARBOHYDRATE

Why baking soda and not baking powder?

@Becky Skinner - I prefer baking soda, because regular baking powder contains aluminum which can cause dementia or Alzheimer's. I was going to buy baking powder aluminum free at Trader Joe's but the main ingredient was baking soda, so I saved my money and still use baking soda. Baking soda has 4 times the power of baking powder, so 1/4 teaspoon soda is equivalent to 1 teaspoon of baking powder.

Yeah... they at least RESEMBLE a proper bun. I find that if I add cheese to my buns they do taste like bread. If not... well they do RESEMBLE a proper bun.
