It looks so good. I recently became diabetic but also am a professional baker. I really haven’t been baking since covid began. I had a bridal shower cake early in covid and that has been it. Hopefully after we are all vaccinated my jobs will start up again. I miss baking and being creative. Thx for a keto recipe. I will wait for your frosting recipe and make it for my husband and I.

I am prediabetic and I have been craving cake since the diagnosis. I came across this recipe and your sugar free carrot cake. I am going to do the carrot cake today. I am also a student in pastry arts class and will be graduation next week. I need to get more into sugar free baking to fight off diabetes. Thanks for your recipe.

Swerve is an alcohol sugar that doesn't raise insulting levels like Splenda or equal can do. Also, Monk Fruit is used as a substitute for sugar. The cake is pretty moist. Of course, if you use another sugar you might have to play with how much to use with the cake but swerve is pretty much the same amount as regular sugar.

As long as you let it cool down completely you can frost it in a couple of hours but I always suggest the overnight stay in the fridge as it helps to get a moist cake.

No, it might not work. I am working on a vanilla recipe but I got sick with Covid and took me down for a month. I am starting to catch up with life again!

@@militza_79 No le he probado con manteca pero creo que no debe haber problema. Lo que pasa es que mucha gente no le gusta usar manteca emulsificada en dietas. Tambien quizas, puedas tratar hacer mitad mantequilla y mitad manteca.

Can I use normal flour ? Instead of almond and coconut flour ? It's got my friend who is diabetic and can I use buttermilk? Or is it best to do the heavy cream with vinegar? Xx

Basically, it's vinegar and milk makes buttermilk but the heavy cream has more fat. I still think it would work fine. As far as the flour, keep in mind that regular flour raises insulin too so is best this is even healthier. If you want to use regular flour, I do have a recipe for chocolate cake and all you have to do is change the sugar for Swerve Sugar and it should work too.

That is a whole different recipe. Coconut flour is an option but the amounts of the flour are completely different if you want to use it.

Hi Edna I love all your cake recipes but I am having an issue with this one and I just realized the reason is the discrepancy between the written recipe and your video. Can you please clarify what are the correct amounts needed of the following ingredients. You mention 4 oz butter in the video, but have written 1/2 stick when a whole stick is 4oz. In the video you also say 1/2 cup of coconut oil & have Written 1/3 cup. Also in the written recipe there is no mention of baking powder and you say add 2 teaspoons in the video. I love the taste of this cake but it is coming out to dry for me. I believe the issue is the discrepancy in the listed ingredients. If you could shed some light would be much appreciated. Thank you 😊

I apologize.. I did many tests for this cake and I probably use one of the wrong notes. I already fixed it on the website. The only one I need to double-check is the coconut oil because I did tests with a half cup and also did tests with 1/3. I am leaving it at 1/3 for now until I double-check. I am glad you notice the error. I was exhausted when I did that and didn't notice the mistakes. Thank you for letting me know.

For the cake, yes, but if you are wanting to do the buttercream recipe I posted for this cake, I would suggest making sure it's confectioners style like Swerve.
