To add to my previous comment..honey is heavy, so it’s probably weighing it down causing it to deflate. I’d try 1 tablespoon of Swerve confectioners, plus one extra egg white and 1/2 to 1 teaspoon cream of tartar. And beat the ingredients on high for a minute longer. ❤

Bake it in a loaf pan. When done, rest the loaf pan upside down with sides on something higher till cool. That might stop the bread from deflating.

Turn the oven off and leave it inside for 15 minutes before opening door and removing. Also add cream of tartar to the egg whites to help retain the structure.

I make similar daily. I use allulose instead of honey. I also have used the liquid white forever. I just can’t waste all these yolks. I also use a stand mixer.

I’ve tried this many times and agree it’s more marshmallow. This doesn’t taste like proper bread to me. I’d just use almond flour scone recipe as a loaf. It’s perfect.

It's delating because you bought it out of the oven too quickly. Treat it like a pavlova. 1. Never, ever open the oven when it's cooking. 2. When it's finished cooking, turn the oven off. Leave it for a bit and then pop a towel at the door of the oven, so it's just ajar, and don't take it out until the oven has cooled completely.

Mayra is using one from ChocZero (which I just noticed, from her description), sweetened with monk fruit. It tastes a lot like honey, but I can’t tell you what else is in it as whoever printed this label must’ve trained at an insurance company (the print is so tiny). It came as part of a bundle I got earlier this year.

That is normal it always deflates influencers take photos and show you what it looks like right out of the oven. If you use egg white powder and other ingredients it can stay loaf like but to be honest the egg white powder tastes like cardboard foam and makes you choke.

This is kinda like Angel Food cake..To keep Angel Food cake from collapsing turn ring pan upside down to cool. This i don't how, unless it will stick to pan. Then put 2×4 wooden boards under each of tray until cool.
