In the years since his time at Ubuntu, where his cooking was cerebral and esoteric, Jeremy Fox has settled into an more approachable (if still very refined and technique-driven) style at Rustic Canyon in Los Angeles. We asked him to show us this salad, which we called a Caesar. Which it isn’t, as he’ll tell you, except, you know, that it is.
