I saw this video 3 years ago. I dreamed of making it until last night. The first thing I did was prep the french fries. If you make them definitely use grape seed oil or an oil that has a high smoke point. I didn't and I thought they could have been crispier. If you make this find the recipe online bc Ludo makes this look as easy as making a peanut butter and jelly sandwich. It will probably not be so easy for you. After all was eaten and done it was one of the best steaks I've ever eaten.

Chefs dont eat rare meat you go from rare guy to medium guy when you realize more flavors come from a fuller cooked steak. Eating rare or undercooked protein is for the guests. Chef.

For everyone saying the steak is overcooked, it isn't. It's how he likes it. Medium well with a flavorful sauce is still a great way to eat a steak. Depends on your preference!

The optimal way of cooking filet is rare to medium rare to maximize the tenderness and flavor without it getting livery. It’s fine with a cut that has much more fat, but not a filet.

Theres nothing "medium" about that steak, it's overcooked to hell and back, they didnt even show the inside because they knew it looked like shit. And look at all the juices lost on the plate where he put the steak to rest, due to piercing it with a fork when he lifted it from the pan.

I’ve seen a lot of great chefs who may not have been steak experts do it. I would say try a steak with pepper before and try one with pepper afterwards to see if there is a difference. I haven’t really noticed burned pepper before. It is possible that the people pushing that idea use expensive steaks and don’t want anything to potentially ruin it.

sometimes when you make sauces, you want the sauce itself to shine through. If you use the pan with the steak remains, it will just taste like steak-flavored steak and not shine its individuality. You want to recognize the dish as steak and sauce, not steak and liquid steak.

​@@Grieverexx Um,Ludo deglazed the pan with the steak in it so clearly the sauce has the steak remains in there. He didn't use to same pan for the sauce cause it was hammered and it would have turned the sauce a really darker color.

Yesterday At your restaurant we hated the food . It was horrible price to pay for such an substandard food : The salmon tested like burned plastic and that frite pepper steak I would not fed my dog . Horrible : you charge$52 for a substandard food ? This is a community you are serving . At least offer a quality, flavor, skills. I do mind fast food but I rather eat a Mcdonalds at least I would not be paying $200.00 for a total crappy food . It was an insult : disgusting .I have never felt cheated before . Yelp has close to 500 negative reviews on your restaurant. . Out of 800 reviews 500 are negative. Yelps integrity is on a line . How did you get 4 star review with hundreds of negative review. I am cheated out of $200

Love the video, but just so we don't scare away anyone... there shouldn't be any blood in a steak. It's drained at time of butchering. The juices are water + myoglobin. :)

Go to an Indian Supermarket and buy Ghee. That is clarified butter. Much cheaper.

Dylan Toth You are right but for frying chips both are great as their smoke points are high. Ghee gives a nuttier taste that I like also it is a whole lot cheaper.

@@ajisenramen888 while it might be cheaper, it would still cost a lot to fill up a deep fryer. At least where I live, I only see it in 8-10oz jars. And it's like $7. Googling I see like 5-7lb tubs. Looks like it would be $60-70'ish to fill up a fryer to make fries, which is crazy lol. I'd love to try it though.

Chef, how long did you re-work that crust after you re-introduced the steak to the pan? If I did that, after searing 4 minutes per side, I would probably blow it and overcook it...

You just want sound important, but there will always be some bit of Hemoglobin left no matter how amazing your butchering skills are. Both Hemoglobin and Myglobin have high iron (thus the red color), move or store oxygen and are proteins (both found in muscles).

Might be because he's not extremely fluent in English, he's clearly thinking in French and translating his though on the fly. In French "rare" is called "saignant", it literally means "bleeding", we know it's not blood, but from there it's easy to mix things up when talking in another language.
