Hi Luke. The very sweet white rice is fermented sticky rice. It's not meant to be eaten plain. It's used in cooking sweet stuff such as poached eggs. Add some of that fermented sticky rice in the water pot, then add eggs. Sweet soupy eggs. Great for anytime am to pm. You can also add dry Logan fruit. Traditional in Southern China. I sometimes use raisins. dry gogiberry / cranberries. Tasty stuff! Warms you right up (head to toes) in cooler weather or when you are under the weather! ')) The fermented rice (in jars like this vendor sells) can be found in Asian markets (in large cities) in U.S / Canada. Asian market also sell the little balls so you can make them yourself. I tied it a couple of times. Kunming is pronounced ... Kun like Quinn but a lil shorter. A bit tricky.

That rice is what sake or rice wine is made from. There's two ways of eating it, one as a dessert where the fermentation is slowed way down by refrigeration, other way is to let the fermentation complete where it then becomes rice wine or sake. It's made from glutinous rice, is a short grain very full of starch .
