Raviolini
320 g wholemeal flour
80 g semolina flour
100 g strong flour
4 whole eggs
Egg yolks until the total with whole eggs is 330g
Salt
These quantities are for the stuffing of one chicken, so make according to the quantity you want to make.
One chicken makes about 10 servings of raviolini.
Stuffing
1 chicken
1 onion
2 small carrots
100 g tomatoes (whole tomatoes)
1 sheet rosemary
salt
white pepper
Broad stock (consomme)
Chicken bones
Water, ice
bay leaves
Dried tomatoes
Vegetable peels
After simmering for 3 hours, strain
Ground meat (beef is good)
carrots
celery
Egg whites
Final adjustment to taste with salt
