It's ghee..clarified butter..south asian cuisines use it all the time. The west made it expensive. Your rosti looks amazing!!

Thanks for sharing. I tried steam big thin slices of potato before add eggs to fry with butter. Will give it a try on this version with stalk onion pepper and salt
