秘制蜜汁排骨,我用的是排骨酱,海鲜酱和老抽腌制。如果没有排骨酱,可以用叉烧酱或柱候酱代替。
For the honey glazed BBQ ribs, I used spare ribs sauce, hoi sin sauce and dark soy sauce. If you don't have spare ribs sauce, you can use char siu sauce or chu hou sauce instead.
Ingredients:
Spare Ribs: 800g
Ginger: 5 slices
Garlic: 3 cloves
Onion: 50g
Shallot: 10g
Spare Ribs Sauce: 2tbsp
Hoi Sin Sauce: 1tbsp
Dark Soy Sauce: 1tbsp
Cooking Oil: 1tbsp
Honey: 2tbsp
Sesame seeds and spring onions to garnish
Method:
1. Cut ribs into strips, wash and soak in water for 10 mins, then drain out the water
2. Marinate ribs with Spare Ribs Sauce, Hoi Sin Sauce, Dark Soy Sauce, Ginger, Garlic, Onion and Shallot for over 1 hour
3. Warm up the pan and fry each side of the ribs and add the marinated ingredient together
4. Simmer for 25 mins(Use low heat)
5. Turn over the ribs after the first 15 mins
6. Simmer for a further 10 mins and add honey, then use low heat to fry for an extra 2-3 mins
7. Serve the ribs and sprinkle with sesame seeds and spring onions.
