I grew up on macaroni and tomatoes but my mom would put a little bit of sugar in it just enough to level the acid taste from can tomatoes. Love it!

My grandma made this but started by sautéing onion in bacon drippings. Then macaroni and stewed tomatoes salt and pepper. Sometimes a little water. This is making me so hungry!

I remember this so well! My grandmother made it, so did my great aunt. Always loved it, and will have to make this for my New Jersey born and raised hubby. I guarantee he’s never had it! Thanks so much for this reminder! We do put some sugar in ours to cut that tomato acid. Can’t wait to have this again.

We do something similar. We do macaroni and cheese with chopped red tomatoes. I too love simple cooking and the old ways of cooking.

Thank you for making this video. This brings back memories. I grew up on this as a kid in the 60s. We were poor but really did not know that, and there were a lot of kids in our families to feed so this dish was economical and went a long way to feed everyone. My mom, my aunts, and my grandmother all made this for us kids and we were from California and Oregon so I never knew this was a southern dish. My mom always added a small amout of meat like a cut up roast or some chunks of stew meat. We all loved this and I still make this. To me it is comfort food.

A lot of people do add sugar, I prefer the tartness of the tomatoes. I do however add sugar to my baked tomatoes.

I wanted to say something about tomatoes being you grow your own as I did until a couple of years ago. I used to get complaints of sauce tasting " sharp" and acidic even after cooking it down for pasta and I got a tip that works every time. I add a couple stalks of celery to the pot and remove when the sauce is cooked.. Something about celery cuts the acid and sharpness and I never get complaints of acid indigestion anymore. You can't taste the celery at all...After all this I said you probably know about celery in tomato sauce. Thanks for getting back to me.. I enjoy your channel. !

My Mom’s family from NM grew up making something like this for Lent. It was large elbow macaroni with canned tomato and cheddar cheese, salt and pepper. You stirred in cubes of cheese to drained hot noodles that melted only a little, so both tomato and cheese and noodles stayed chunky, not saucy. The first time my Aunt made this for her husband who was from Kansas, she was horrified to see him add sugar! After now learning this dish is an old timey Southern dish, I’m wondering if our family started adding the cheese much later during more prosperous times?

My mom made mac and tomatoes and I would put hot sauce on it. Then after it was cold, the next day she would fry it in bacon grease and some of it would get crispy.

Ok. I made this and it was fantastic. You cannot overcook the noodles. I added sautéed bacon and onions. My husband loved it. Reminded me of my childhood
