He tries to intimidate windu by immediately displaying his ability to wield four lightsabers, but windu is among the best and is able to focus and show no fear or hesitation.

That scene actually tells you alot about just how dangerous General Grevious is rather than how powerful Mace is. Windu in legends really enjoyed duelling (well fighting in general) and having a good scrap. For him to basically go "no way ima just crush your ass" kind of shows just how big of a threat he percieved the cyborg to be.

It’s beautiful that Palpatine lost to Windu. That idea is much better because it shows that beating the Jedi is not easy. Palpatine tried his best to avoid Mace and Yoda as much as possible and was betting on the clones and Anakin to kill those two for him. Rather than that happening, Palpatine ran into both Mace and Yoda and nearly lost his life in both battles. The only two biggest threat standing in his way. But the force/fate chose for him to live. Palpatine is very very fortunate

This completely recontextualizes why ROTS Grievous is so afraid of fighting Jedi head-on and mostly wants to escape now. Never before was he disfigured this badly by a Jedi, it probably crushed not just his lungs but his confidence as a warrior. He is not just an invincible powerhouse like he's proven consistently, he has weak spots too and he probably couldn't handle that, it was traumatic to his ego. When he fights Kenobi on Utapau later, his mind is somewhere else and he's focused more on trying to retain his pride than anything, so he becomes easier to defeat as a result
