Would've loved to see Obi use this against Grievous, like he turns on all 4 of his lightsabers while they're still attached to Grievous' hips, or he's spinning them and he turns all of them off so the wooshing noise of the blades cutting air gets replaced by the awkward sound of metal wrists spinning.

The way he seems calm (almost bored) and seems show the proper respect to his master, but the head tilt and slight smirk hint at his haughtiness and irreverence; he's only playing the part of the respectful student, while really planning some Anakin shenanigans. There is such as thing as sword fighting "from the bind", where you execute strikes/blocks from a starting position with the blades already touching each other. In such a situation, if you applied pressure just before turning off your lightsaber, then this could unbalance your opponent, assuming they countered by pushing back... However, it typically takes a few seconds to turn a lightsaber off and then back on again, which would leave you vulnerable, unless you had a backup weapon to hand.

The Bane Trilogy explained why “simply turning it off” doesn’t work. When training with Ka’sim, a Sith blademaster, bane learns how to cast an invisible forcefield that blocks low intensity Force powers. He trained bane to fight with memorized forms so that his muscles could do the work mindlessly. This left the brain free to think, process, and focus enough to use the Force. Basically he throws up a passive barrier called a Force Wall. People of intense enough powers can break through of course, as the Son was able to casually break Anakin and Obiwan’s barriers literally turning off their lightsabers. See the Mortis arc in Clone Wars.
