We made these - wonderful! And they held up until the next day when they were even more delicious as the flavours developed and melded together. I'm making them again for guests on Saturday evening. Thanks GR, great cooking.

I made this ... looked beautiful but wasn't really as good though. Most of my guest agreed there should be a bit more spice/meat to it to add another dimension. So I made it again with smoked salmon and it was awesome!

this was so delicious. the cheese mixture was amazing. I made it to a T. didn't burn the line nuts though. I'm on a mission to make as many Ramsey's recipes as I can. if he can do it so can I. I may not have the 20+ years and culinary school. but I can be a pretty good copycat.

Virson73 I'm with you on the oil thing, but it's just as simple as using less for your self. It doesn't really effect the recipe unless it's for like a baking recipe that requires exact measurements.

If you don't want pine nuts, don't use them. Some people avoid Pine nuts because it can cause pine mouth which makes your mouth taste something like metallic and can last a couple of weeks.

@StealthTacticsClan virgin can also mean pure, yes? and the purity we are talking about is the oil from the fruit itself. olive is a berry/fruit (this i am not sure) what destroyes the purity of olive oil (corrodes) things? acid, which adds a buttery taste and because its a fruit it will have some acidity to it. so all in all the less acid it has the better and less buttery it taste. anywho the joke is made with olives, not the oil.

@Ammo1174 they are, how is it not. only reason why it wouldn't be simple is because, some people don't have a culinary background. its no different than throwing and catching a ball. you learn how to catch it. kids try to just grasp it with there fingers, us adults try to match it's speed to let the ball fall into our hands. you just gatta get some experience roasting the nuts(so that it doesn't burn) and to take your time for this one. everything else is laid out for you.

In fact there is such a thing as too much olive oil. Not only is olive oil very strong in flavor, it contains vitamin K which controls the coagulation of blood. So especially if you're prone to blood clots, don't use too much olive oil.

@xm9rg3x Mascarpone is "heavier" than ricotta and it's also tastier. If you were to use mascarpone instead of ricotta, you would loose some lighter flavours from the other ingredients.

oh no - just a tiny bit of smoked salmon mixed with the cheese stuffing. The quick cured courgettes are too perfect to replace in this recipe
Made these tonight......AWESOME!!!! But next time I either need smaller courgettes or a wider peeler....LOL. Made a bit of a mess :-D

@Nebulax123 hes a totally different person ourside of cooking in a restaurant. he gets serious when hes involved. he yells at the chefs like in hells kitchen because they NEED to have good teamwork, leadership, timing when it comes to food and quality of the food to own a good restaurant. Gordon's carrer is based on what he produced in his food. so everything he sends out MUST be perfect.

I don't put zucchini in ratatouille... I cut them into rounds with yellow squash and saute it with onions. It's the easiest, tastiest side there is.
