I tried this recipe today as a beginner. It came out really well. Tastes great. My 4 YO son ate two in a row. What more appreciation do I need. ❤

I just made these and they are better than any of the other madeline recipes I’ve tried. And the pan release mixture worked like a dream. This recipe is a keeper! Sam never disappoints.

This is it...the best easy Madeleine recipe! :) I had tried another recipe several months ago with disappointing results so I had put my pan away. Tonight I ran across your video and decided to give it another try...absolute perfection! @@SugarSpunRun My favorite tip was using the flour and butter mixture to coat the shell cavities because it works so well they popped right out with no problem. I also used a silicone muffin pan for the extras and those came out perfectly as well, only round. I thank you again, because though I am a good cook in other areas, I have done very little baking and now I feel very pleased about my capacity to whip up a delicious accompaniment for my Cafe du Monde. If I close my eyes as I nibble my Madeleine and sip my coffee I could imagine myself in New Orleans... which is a very welcome feeling in the middle of an Iowa winter. I'll be checking out your other recipes for sure! :)

#Protips: 1) before you mix the butter into the batter, scoop 1 tablespoon of batter into the butter and mix. Then pour the small bowl of butter into the larger batter bowl. This is called tempering your butter and it will make incorporating the butter into the larger batter batch much much faster; and 2) chill the batter for 30min in the freezer to help get your hump taller than what's shown in the video. It will be at least 2-3x higher. While the 1st batch is baking, put the bowl in the cooler. Don't forget it in the fridge more than 1 hour, which will freeze it (you don't want that to happen).

@@SugarSpunRun Yep, I found your blog post and read everything. Didn't see the video, so I searched on KZbin here. I think your recipe is good, but I would still recommend chilling it. I like the humps to be really high, like half an inch high. :)

I am now interested again since ur videos show techniques that are uncomplicated. Does made ahead refrigerated batter need to be brought to room temp before baking these? Thanks again!

I hope you love these! You won't need to bring refrigerated batter to room temperature. You can just bake them right from the refrigerator. :)

I tried this with all the same parts and ingredients. Taking the out at 9 mins the )ave a dark brown bottom and nice top. Taste great but the don’t look correct. Any advice? Thanks

Hmmm that's really odd. Is your oven temperature accurate? That's one of the only things I think could be causing you an issue here.

These cookies are designed to be a little more dense than an average cake but not quite as dense as a normal cookie, so I'm not really sure of a good way to make them less dense. :(

I have no room for more pans!! You're mean, posting this!! LOL I've always wanted to try them, however, since it takes a special pan just for them, I've shied away. I bought a jumbo muffin tin, then the muffins couldn't stand on their own! They collapsed. What a sight that was! I had made them for a bake sale too! I need recipes that use a cookie press! I bought one after Christmas and I've never used it. It's a Marcoto, with 20 different disks! On the labels you used for your flour-sugar, did you get those at BB&B also? I have the cardboard labels and some clear, nothing as large as yours. I love how large yours are! No BB&B close to me...hahaa

😂 It can definitely be frustrating to have to buy different tools for different recipes! I have lots of stuff I have only ever used 1 time. For those labels, I actually bought them from an Etsy shop. It was probably 6 or 7 years ago at this point so I really don't even remember what store I got them from.

Update: Sorry I see they didn’t copy over. I don’t typically put grams in for teaspoons or tablespoons. The sugar will be 100g and the flour will be 156g and the butter would be 141g. They should also be in the description. 😊
