*Randy:* You'll need to update your insert on peppercorns. They are not called "red" peppercorns, they are called "pink" peppercorns. Pink peppercorns are not a true peppercorn (genus _Piper_ ). Since they are the same shape and size as true peppercorns, they are marketed under the name “pink peppercorn.” Not peppercorns at all, they are ripe berries of different plants depending on where they are being sourced: _Schinus terebinthifolius_ (Brazilian peppertree), _Schinus molle_, (Peruvian pepper tree), and _Euonymus phellomanus_ (Spindle tree with is actually a shrub). Not only do I love seeing the recipes, I also love seeing the family time at the end. You see how grandpa loves his grandson, making sure the baby is right next to him, not the baby’s parents. That’s the OG Asian love. My dad passed away 10 years ago. Watching this reminds me of how he was with my kids. Love love love

I ran out of oyster sauce so I used Fish sauce instead. Also, I ran out of corn starch after making the marinade so I coated the pork chops with flour. It turned out amazing. My mom was surprised how tender it was and my brother who is a very picky eater said he didn't know that pork chops could taste so good. Thank you for sharing your knowledge.

I’m Puerto Rican and I swear the only other type of pork chop seasoned or style I would eat is this. We are kings of pork but this just gave me a hell of an idea. Love the family atmosphere and culture sharing you guys provided. This was awesome. Your dad reminded me of my late Grandpop.

The marbling and coloration of the meat in the video looks more like the blade end cut of the pork loin. Might also be called an end roast in your supermarket. When I heard pork chop initially I thought the meat would be too tough, but Mr. Lau is using a fatter cut of the loin. My go to is pork shoulder as it takes marinade well, well marbled, and nearly impossible to dry out! Love your videos 🙏

Wonderful recipe and demonstration! The way your Dad speaks is just so homey to me - his cantonese dialect is just like my Grandma's. How he uses the word "doy" instead "jai" to call you son - he must have been from a similar area that my Grandma came from.

For the keeping the kitchen clean while frying question: if you have access to an outdoor space, do your frying there. I use an Iwatani butane burner (which also burns much hotter than most indoor ranges) in my garage for all my messy frying jobs. There's just no way to prevent your kitchen getting coated in oil from frying, especially since a lot of the oil aerosolises into a greasy mist which settles on everything. If you can't fry outside, at the very least you can put an oversized bath towel on the floor in front of the stove to keep the oil spatters from messing up the floor. I also have a spray bottle filled with straight ammonia that I use to degrease the stove and counters. Just lightly spray and wipe off with a wet towel. I love fried foods, but I really hate grease.

Made this this evening, was good but found it to be very salty I wonder if the 1/4 tsp in the season mix was necessary? But could be the garlic salt I bought being a bit more on the salt side. However I see @ 4.44 you show a picture of the garlic sauce daddy lau used so I screenshot it and found on amazon UK. Looks like I'll be making again over the weekend.

Agree. Ours was so salty, it was difficult to eat them. Had to eventually just rinse the salt off the fried pork chops with water.

@@twobrownbears I haven't got around to trying this recipe again yet but next time omit the salt and just use the garlic salt. Grateful for the recipe and the channel every thing else I've cooked has been amazing. I hope one day they will publish a cookbook!

@@eldubs agree that the other dishes were delicious. next time I was planning to omit the salt from the seasoning and just use garlic powder with white pepper. Garlic salt is mostly salt. There's a lot of salt in the marinade with the soy sauce, oyster sauce, and salt, so I'm hoping that will be enough.

I love that there is an English introduction, and that dad is speaking in Cantonese with English subtitles.Listening to him reminds me of listening to relatives when I was young I love that the family gives their input also on recipes, dishes. Pork marinade 2tbsp cornstarch Less than 1/2 tsp baking soda 1tbsp cooking wine 1tbsp oyster sauce 1tbsp light soy sauce 1tbsp water Quick mix Add 1tsp sugar and 1/2 tsp of salt Mix pork in by hand for 1 minute, leave in marinade for 30-60 minutes

We normally prefer sparibs though.. This is the perfect beer match. Sadly we don't order this if the other king Sweet and Sour pork is ordered... but Salt and Pepper Squid will definitely be around. I'm salivating right now. :) Also, on my birthday, should my dad ask, I always go for SnP Sparibs, Beef Hofan and Lemon Chicken. Plus Yang Chow fried rice... I'm so hungryright now!!!! :D

Deep frying inside is always going to represent problems. You have an exhaust fan over your oven/range, why is it not used? I have an exhaust fan similar to yours, (650 CFM). When it is at full blast, I can't smell any cooking odours in the connecting adjoining room. Your father and I are about the same generation (I am 81) and I speak Hoisan (Toisan) and Canto dialects the same way. I feel like I am home when looking in on your site. I immigrated in 1950 but have retained much of my Chinese, spoken only. I live in Atlantic Canada, where are you, generally speaking?
